In order to get from OKC to San Diego by train you would do the following:

Depart Oklahoma City @ 08:25a Train 821 (Heartland Flyer)
Arrive Fort Worth @ 12:39p

Depart Fort Worth @ 04:00p Train 21 (Texas Eagle)
Arrive San Antonio @ 11:45p

Spend night at Station (train leaves to early to go to a motel)

Depart San Antonio @ 05:40a Train 1 (Sunset Limited
Arrive Los Angeles @ 10:10a (1 day later)

Depart Los Angeles @ 12:25p Train 774 (Pacific Surfliner)*
Arrive San Diego @ 03:10p

*Note* AMTK 572 (Pac Surfliner) departs at 11:10, if you think you can jump trains fast enough at LAX

crazyace is spot on, but don't worry too much about the LA connection; there are lots of trains between LA and SD every day; somerun quite late into the evening.
