Hot Cheese Snack
1 cup grated sharp cheese
½ cup soft butter or oleo
1 cup and 2 Tablespoons flour
Ground hot pepper
Mix cheese, butter and pepper. Add flour and mix well. Roll into marble sized balls and place on ungreased baking sheet. Press well with fork. Chill. Set oven at 450° and bake 10 minutes. Better served hot.

Guacamole Dip
4 Avocados (retain seeds)
1 can Ro*tel hot tomatoes, drained
½ cup chopped onion (chop fine)
½ tsp accent
2 Tablespoons lemon juice
salt to taste
1 clove garlic, minced
Peel avocados, seed and mash pulp with fork until small chunk consistency. Mash tomatoes into very small pieces. Do not use juice. Mix all ingredients together. Put seeds back into mix to keep avocados from turning dark. Remove before serving.

I love to make a "stinky cheeseball" or "cucumber salad".
Stinky Cheeseball (doesnt really stink... just a name!)
2 pkgs. 8 oz cream cheese
1 jar dried beef
worchesterchire sauce (about 1/2 Tbs.)
Accent Seasoning (about 1-2 tsp.)
Shred up dried beef by hand and mix all ingredients by hand.. it's really messy, but what the heck. Form into whatever shape you want and place it on a plate. Serve it with crackers like Club crackers.
Cucumer Salad
About 5 large cucumbers, diced
2 to 3 large tomatoes, diced and seeded
1 large onione, chopped
1 bottle of Zest Italian Dressing
Mix up all ingredients. Let chill for a couple hours... sooo good.

well, one option is take a recipe you've used before, and alter it.
You make Chocoalte Cobbler, or even Almond Pudding Loavs.
ALMOND PUDDING LOAF
1 1/2 cups toasted, and finely chopped almonds, divided
2 1/2 cups biscuit mix
4 eggs
2/3 cup milk (it's hard to find a measuring cup of this measure,
but there are some times, recipes that call for it. IT don't figure.)
1/4 cup sugar
1/4 cup oil
3 1/2 ounces instant vanilla pudding or prepared pudding
For the glaze (why is my key board sticky?)
1 cup powdered sugar
1 to 2 Tablespoons milk (yes you culd use rice milk or soy milk)
1 tsp almond or vanilla extract
Heat oven to 350 f. Grease four 6x4 inch loaf pans. Sprinkle with 1/2 cup of almonds.
Beat remaining almonds with the biscuit mix, eggs, milk, oil, pudding and sugar on low speed, for 30 seconds. Then beat on medium for 3 minutes, scraping the bowl, occassionally. Pour into the prepared pans.
Bake 50 5o 55 minutes. Immediately remove from pans; cool completely on rack.
For the glaze, mix the ingredients in a small bowl. Beat until smooth. Spread over cooled bread. Makes 4 loaves. But you might want to double it to make 8.

Green Chile Cheese Squares -
1 (4oz) can chopped green chilies
1 c shredded monterrey jack cheese
1 c shredded sharp cheddar cheese
1/4 c minced onion
1/4 c crumbled potato chips
8 eggs, slightly beaten
1/2 c milk
dash cayenne
chopped cilantro or parsley
Mix chilies, cheese and onion, put in well-greased 8 in. square baking pan. Sprinkle crumbled potato chips over all. Combine eggs, mlk, cayenne; pour over chips, chilies and cheese.
Bake at 325* for 45-50 min. or until set. Cool 5 min. Cut into shapes and serve with toothpicks. Sprinkle with cilantro or parsley.
Can serve with crackers

Ribbon Pumpkin Bread -
Filling:
6 oz cream cheese
1/4 c sugar
1 TBS flour
2 egg whites
Batter:
1 c pumpkin
1/2 c unsweetened applesauce
1 egg
2 egg whites
1 TBS canola oil
1 2/3 c flour
1 1/4 c sugar
1 tsp baking soda
1/2 tsp salt
1/2 tsp grd cinnamon
1/2 tsp grd cloves
1/3 c chopped walnuts
For filling, combine and set aside.
In a mixing bowl, beat pumpkin, applesauce,, egg, egg whites, and oil. Combine the flour, sugar,soda, cinnamon, and cloves; add to pumpkin mixture. Stir in walnuts. Divide half of the batter between two 8x4x2 loaf pans. coated with nonstick cooking spray. Spread each with filling, top with remaining batter. Bake at 350 for 40-45 min or until toothpick inserted comes out clean. Cool for 10 min. before removing from pans to wire rack to cool completely. Refrigerate leftovers.
Makes 2 loaves

Try little mini quiches. Use a mini cupcake tin and roll out your crust thin. Cut rounds with a tin can (both ends cut out of the can so its a ring) and then just press the rounds of crust into the cupcake tins. Make the quiche filling of your choice and put a tablespoon or so of filling into each mini crust. Bake for 30 min until the quiches are set. Its impressive but not terrible difficult to make, especially if you use the pre-rolled crusts on the market these days.

Veggie Pizza
1 package crescent rolls
1 cup sour cream
One half cup mayonnaise
1 package dry Hidden Valley Ranch dip mix
1 cup cheddar cheese, shredded
One half cup fresh broccoli, chopped
One half cup green onions, chopped
One half cup carrots, shredded
One half cup zucchini, grated
One half cup mushrooms, sliced
1 8-oz. can sliced water chestnuts, drained and chopped
Spread out crescent rolls on a baking sheet to form a crust and bake for 10-15 minutes at 350 degrees until lightly browned. Remove from oven and allow to cool. Combine sour cream, mayonnaise and dry dip mix and spread over crust. Place vegetables over dressing and top with shredded cheese. Refrigerate until ready to serve. Cut into squares before serving.
CHEESECAKE BALL w/ MINI CHOCO CHIPS
1 8-ounce cream cheese, softened
1/2 cup butter, softened
3/4 cup confectioners sugar
2 tablespoons brown sugar
1/2 teaspoon vanilla extract
3/4 cup mini semisweet chocolate chips
In a medium bowl, beat together cream cheese and butter until smooth. Mix in confectioners sugar, brown sugar and vanilla. Stir in chocolate chips. Cover, and chill in the refrigerator for 2 hours. Shape chilled cream cheese mixture into a ball. Wrap with plastic, and chill in the refrigerator for 1 hour or overnight. Serve with chocolate graham crackers.

"Hidden Valley Pinwheels" - 3 dozen
1 (1 oz.) packet Hidden Valley Original Ranch Dressing Mix
2 (8 oz.) pkgs. cream cheese; softened
2 green onions (scallions); minced
4 (12") flour tortillas
1 (4 oz.) jar diced pimento
1 (4 oz.) can diced green chiles
1 (2.25 oz.) can sliced black olives
Mix first 3 ingredients; spread on tortillas. Drain vegetables and blot dry on paper towels. Sprinkle equal amounts of vegetables on top of cream cheese. Roll tortillas tightly; chill at least 2 hours. Cut rolls into 1" pieces. Discard ends. Serve with spirals facing up.

If you want something yummy and easy try corn tortilla chips with my Mexican style salsa:
10 roma tomatoes
10 serrano peppers
1 small onion
1 lime, juice only
3 garlic cloves
cilantro
a dash of salt (to taste), oregano and white pepper
In a blender mix all the ingredients, if you need extra salt added and you are done!!
