My dogs' vet says that certain breeds love this activity with smelly things. My Beagle/English setter always loved to escape after a bath and go to a pasture with horses. She would spend hours rolling in horse crap.

LOL!!
Smell for dogs is like sight for people. A dog's nose give them far more information that their eyes do, so rolling in strong smells is sort of like a person putting on a pretty dress or dressing up for a special occasion.
He just wants to be pretty.

Too funny! Dogs are great aren't they?

There are many theories, but my favorite is that they roll in stinky stuff so that they smell more like their prey, and there for have a better chance of sneaking up on a potential meal.

Funny little critters aren't they? One of my dogs ate everything we gave him except shrimp. He took it into the other room & rolled in it till it was smashed into the rug.
