Hazrat Aisha ( Prophet Muhammad's 9 year old wife) said that one day i came home from my dad's house and i saw Prophet Muhammad (PBUH) eating something crunchy, I asked O Apostle of Allah what are you eating, He(PBUH) said come and try, so i did and He(PBUH) asked me if i liked it, i said yes very much, then HE (PBUH) said that it is port rind.
So to answer your question, NO he did not invent it, but he sure did enjoy it.
