Plums and prunes are actually two different (although very similar) fruits. the main difference being that plums are a cling stone fruit (the meat of the fruit sticks to the pit) and prunes are a free stone fruit (the meat of the fruit pulls away from the stone easily). Another difference is that most prunes are dried or processed into juice and plums are more commonly eaten fresh.

Prune juice comes from pureed prunes which has water added to make it more liquidy. Prune juice doesn't taste icky, it don't taste like plums because it's not plums, they have been dehydrated into prunes which are so much better.
