why does wine go sour or bitter faster if the cock is removed from the bottle?

You got a c ock in your bottle? All I ever get are corks... Damn... I gotta start shoppin around. The answer has been listed above. As for your c ock in the bottle... Knock it off. I hear it's dangerous.

When the cork is removed, the wine is getting oxygen and that is why it gets bitter faster. There are ways though that you can help so that doesnt happen. there are cork vacs that help out with that.

When the cork is removed the wine is exposed to oxygen and begins to oxidize. much in the same fassion as a piece of iron begins to rust. (rust is formed when iron oxidizes)

It gets oxidised...wine turns into vinegar...the word vinegar being derived from french vin aigre or a wine that has a strong taste and smell as it has been oxidised.
