GRILLED HALIBUT
1/2 c Soy sauce; low salt
1 ts Ginger; (grated)
1/4 c Brown sugar
1 c Garlic
1 ts Dry mustard

Mix ingredients in a marinade dish and add halibut steaks. Cover both
sides and let stand 4 hours turning frequently. Heat grill to medium
temp. (A seafood cooking screen helps hold fish together) Grill
steaks until well done but not dry, basting with marinade frequently.
Serve with rice or veggies. Good stuff!!

There are a lot of good ways to cook Halibut here are a couple of my personal favorites.

GOURMET HALIBUT

2 lb. halibut steaks, 1 1/2 inches thick
1/2 c. chopped green onions plus tops
1 c. sour cream
1/4 tsp. white pepper
Salt to taste
Dash of dill weed
1/3 c. Parmesan cheese

Place halibut in well buttered baking dish, single layer. Combine all ingredients except cheese and pour over fish.
Bake at 350 degrees for 20-25 minutes. Sprinkle with cheese and broil long enough to brown cheese lightly.

I also do this one in the microwave: cook fish half way then put on sour cream mixture and cheese to completely cooking (cheese does not brown). Serves 4.

HALIBUT WITH GREEN PEPPERCORN CREAM
SAUCE

2 (7 oz.) halibut steaks

Bake halibut at 350 degrees for 15-20 minutes or until just starting to become flaky to the touch.

SAUCE:

1 c. heavy cream
2 tbsp. brandy
1 tbsp. dry vermouth
1 tbsp. green peppercorns
Salt and pepper
Real butter (1 stick)

In a saucepan, heat small amount of butter and saute green peppercorns for 1 minute; add brandy and vermouth, reduce by half; add cream, reduce by half. Season with salt and pepper.

There are a lot of good ways, but the way I, being very busy, found is wonderful, fast and easy and my whole family loves it. You simply cover the halibut with Veri Veri Teriyaki sauce, place it on a baking rack that has been preheated to 400 degrees (uncovered) and bake it on the middle rack of the oven for 12-15 minutes depending on the thickness. Be careful not to overcook it. Serve with lemon wedges and that's it! It really is great.

"Halibut with Bacon" - 4 servings

1/2 cup lime juice
1/2 cup chopped green onions (scallions)
2 tbsp. vegetable oil
2 tbsp. minced fresh cilantro (parsley)
2 tbsp. chopped seeded jalapeno peppers
1 tsp. salt
1/2 tsp. pepper
4 halibut steaks (6 oz. each)
8 bacon strips

In a large resealable plastic bag, combine the first 7 ingredients. Add halibut; seal bag and turn to coat. Refrigerate 10-15 minutes, turning once.
In a large skillet, cook bacon over medium heat until cooked but not crisp; drain on paper towels. Drain and discard marinade from halibut. Wrap 2 slices of bacon over the top and sides of each steak; secure with soaked wooden toothpicks.
Coat grill rack with nonstick cooking spray before starting the grill. Place halibut, bacon-side down, on grill rack. Grill, covered, over medium heat 4-6 minutes on each side or until fish flakes easily with a fork. Discard toothpicks.
(Soaking toothpicks/skewers in water keeps them from burning.)

HALIBUT WITH HERB SAUCE
The halibut is delicious with sautéed green beans and steamed new potatoes. End with espresso granita or ice cream with grappa.

6 tablespoons fresh lemon juice
6 tablespoons extra-virgin olive oil
3 tablespoons chopped fresh basil
3 tablespoons chopped fresh chives
3 tablespoons chopped fresh parsley
6 6-ounce halibut fillets
2 tablespoons extra-virgin olive oil




Puree first 5 ingredients in processor. Season sauce to taste with salt and pepper.
Preheat broiler. Brush fish with 2 tablespoons oil. Sprinkle with salt and pepper. Broil until just opaque in center, about 5 minutes per side. Transfer fish to plates. Spoon sauce over and serve.

Makes 6 servings.

Make it right into a fish pie. you won't be able to crust and bake them as they'll fall apart once you try dealing with them, and they'll already be cooked, so there is not a lot more effective to do with them. It might want to were a quite negative soup you made it you had to chuck it without with the flexibility to salvage it. you may want to flake it and toss by some fried rice.

Fried with a tempura bvatter,you can purchase from a chinese grocer,the directions are right on the package.

I love to grill fish.. That recipe that "Just me" posted looks pretty good...thats my dinner for tomarrow!!!
