WALNUT CANDY
Categories: Candies
Yield: 36 servings

1 1/2 c Walnuts, coarsely chopped
2/3 c Butter or margarine
1 c Packed light brown sugar
1 - 14 oz can sweetened
-condensed milk
1 1/2 ts Vanilla

To toast walnuts, spread in a single layer in a 9"
glass pie plate. Stirring every 2 minutes, microwave
on high 6 minutes or until toasted.

Place butter in a 2 quart glass measure. Microwave on
high 1 minute. Blend in brown sugar and condensed
milk. Stirring every 2 minutes, microwave on high 8 to
9 minutes or until mixture is a medium caramel color.
Stir in vanilla and beat with a wooden spoon for 2 to
3 minutes. Fold in walnuts. Pour into buttered 8"
square dish. Cool to lukewarm; then refrigerate until
set. Cut into squares. Makes 36 pieces.

INGREDIENTS
1 (7.25 ounce) package white frosting mix
1/3 cup light corn syrup
1 teaspoon vanilla extract
1/2 cup boiling water
4 cups confectioners' sugar
1 cup chopped nuts

DIRECTIONS
Line a 10x15 inch cookie sheet with parchment or waxed paper. Set aside.
Beat frosting mix, corn syrup, vanilla, and boiling water in a mixing bowl until stiff peaks form, about 5 minutes. Mixture will be very thick, and it is helpful to use a stand mixer.

Transfer to a large bowl and gradually beat in sugar; stir in nuts. Drop mixture by teaspoonfuls onto lined pan. Let stand about 4 hours or until firm. Turn candies over and dry at least 12 hours. Store in an airtight container.

Here's a fudge recipe that's really easy to do...

2 c Sugar
2 ts Light corn syrup
4 tb Cocoa
1 cn Evaporated milk, small
1/4 lb Butter (or margarine)
1 ts -Water

Mix all ingredients and stir over low heat. Cook to soft ball stage when dropped in cold water. Beat by hand until mixture loses gloss. Chopped nuts can be added. Pour into a greased 8 x 8-inch pan. Cut into pieces. Cool. And you're done!!! Yummy fudge!!! :) Mmmmmmmmmmm

Here's my fudge recipe: ! 8oz bag of semisweet choc. chips, 3/4 of a cup of margarine, 2/3 of a cup of evaporated milk, 3 cups of sugar,1 gar of marshmallow creme and a tsp. of vanilla. In a heavy saucepan, add margarine, sugar, and evaporated milk. Let it come to a rolling boil on meduim heat. Turn the heat down and stir. Boil another 5 min. stirring often. remove from heat. Add choc. chips and and vanilla and stir. Now add marshmallow creme and 1 cup of nuts if desired and stir. Grease a 13x9 baking dish with margarine. Pour the fudge in the pan and level it out with a spoon. refrigerate for an hour or so and then it's ready.

Old Fashioned Potato Candy
boil 1 small peeled potato till done
mash with enough powdered sugar to make a thick "dough"
roll out onto waxed paper(into a rectangle)
spread with peanut butter(we like creamy)
roll up, slice and lay flat to dry and eat

Hay stacks

1 bag of potato sticks
1 can of dry roasted peanuts
1 bag of butterscotch chips
1/2 cup peanut butter
1 bag of brickle chips

Melt the butterscotch chips in the microwave until smooth. Add peanut butter. Then add all of your other ingredients.

Drop by spoonful onto wax paper and allow to harden. These are soooo gooooood!

I make simple candy. Melt chocolate and add any of these things. Walnut, peanuts, pecans, orange slices, pretzels, or anything else you can think of that you would like. I use Real Chocolate. It tastes better.

Here are a couple of recipes that I have made and are very tasty!!

Cashew Macadamia Crunch
Ingredients:
2 cups (11.5-oz. pkg.) HERSHEY'S Milk Chocolate Chips
3/4 cup coarsely chopped salted or unsalted cashews
3/4 cup coarsely chopped salted or unsalted macadamia nuts
1/2 cup (1 stick) butter, softened
1/2 cup sugar
2 tablespoons light corn syrup
Directions:
1. Line 9-inch square pan with foil, extending foil over edges of pan; butter foil. Cover bottom of prepared pan with chocolate chips.

2. Combine cashews, macadamia nuts, butter, sugar and corn syrup in large heavy skillet; cook over low heat, stirring constantly, until butter is melted and sugar is dissolved. Increase heat to medium; cook, stirring constantly, until mixture begins to cling together and turns golden brown.

3. Pour mixture over chocolate chips in pan, spreading evenly. Cool. refrigerate until chocolate is firm. Remove from pan; peel off foil. Break into pieces. Store tightly covered in cool, dry place. About 1-1/2 pounds candy.

Well, I decide what I want to make, then I go to my cookbooks and find the recipe. Then I make sure I have all the ingredients. If I don't have all the ingredients, I go to the store and buy what I need. Then, I follow the recipe as directed. Do you need recipes?
