I am making Beef Veggie. Barley Soup tonight in my slow cooker for a pot lot I am going to tomorrow.

So far I have the following the following veggies to place in it:
1. Broccoli
2. Cauliflower
3. Carrots
4. Cherry tomatoes
5. 1 can tomato sauce (for color)
6. Fresh potatoes

Can you think of anything else I should add to it? Or do you have any suggestions for me?

Instead of using water for the base, use beef broth it will taste much better.
And if I was you I would not use cherry tomatoes unless you want to peel them all because the skins will come off and they are wierd to eat.
You could use canned whole tomatoes or use beefsteak tomatoes, just dip them in boiling water and you will easily be able to peel them.
Okra will thicken it for you.

Onions and celery for flavor. Also, I'm not positive but since broccoli and cauliflower have a distinct "cabbage" flavor they may not go well in this soup. And, not to nitpick-cook how you like-but potatoes and barley both in one dish is kinda redundant.

Both are good for you, each fruit/vegetable has different vitamins. Therefore as more variety, as better. Vegetables have generally less sugar than fruits.

Celery,onions,corn, peas, soup mix(dry) like Lipton's beefy mushroom its great.

Maybe some corn. Anything more will make the flavors not gel, and it won't taste right. Good Luck!
