Can it be hollowed out and carved like a pumpkin can? Is the rind too thick? I thought I saw this on Martha Stewart once.

Yes, but they say carved gourds last longer than either of those two items.

with the right knife you can carve anything.. good luck finding an acorn squash big enough and with a flat bottom though...
