Because of the lengthy process needed to turn the olives into oil...
Virgin olive oil is the first oil that comes out of the press where the olives are crushed and pressed to extract the oil... Ordinary olive oil (also quite good) is the next step. It is the second pressing (often with some heat added) to extract more oil. Then there is another called Aceite de Orujo... which is made from the already pressed olives, they are ground even more and strained to release the remaining oil. This is also bottled and sold as "Orujo" oil (this oil is usually not used for exporting).
Before all this processing is started, the ripe olives are taken off the tree by beating the branches and leaves until the olives fall and are gathered in a large net on the ground. Then they are transferred by tractor to the mills where the rest of the pressing process takes place, the oil is then bottled, labeled and boxed for shipping...Much more complicated than other seed oils.
The results are an oil of superb quality.
The best olive oils are from the following countries:
Spain
Italy,
France.
Although many other mediterranean countries also have olive groves and produce oil, these three are the best...

Plus the fact that canola, corn, sunflower and safflowers grow in the US and Canada, want to see a high priced oil try almond, avocado or mustard oil, the process they take is critical, some things are easier to extract the oil from, in the US you don;t have as much of it but here in Canada we have just started recently getting oil from Hemp seed, the non-addictive and no THC form of the Marijuana plant, it is nice, but fragile and must be refrigerated, has a nice nutty taste, but like Italian White truffle oil alittle goes a long way.

not always easy to turn into oil and is used more often but so much comes out of an olive

If you get the extra virgin olive oil, it means that it's the first pressed. In laymans terms, when they mash the olives, it's the oil from the first pressing.

#4 cuz you can use it for so much
#5 cuz they can charge that much and people will pay it,, =o)
