We don't say "rubbish" unless we're trying to sound like Brits.
"Garbage" can be used in phrases where Brits would normally say "rubbish".
"Trash" is more subtle because it can also sometimes be applied to people or things, i.e. "she's just trash" or "what a trashy place". We wouldn't say, "what a garbage-y place" any more than you would say in the UK "what a rubbish-y place".

Absolutely nothing is different between "garbage" and "trash". Two different ways to say the same thing. Just guessing, but it could be more popular to say the different words in different areas of America.

Left over food is more apt to be called garbage. Food is rarely called trash. Anything else is trash.
