The tannins and the impurities in the water, if you boil a bottled and less mineraly water, the best is a bottled or distilled water. The optimium time is what ever strength you like, I am of English, Irish and Scottish heritage and I like mine so strong you can walk on it, with a touch of full fat milk and sugar, and I am a dunker with my biscuits, in Canada we prefer Red Rose, but I have been buying PG Tips from England,it is also good.
