Soak chicken in buttermilk, 1/2 cup of Tabasco or other hot sauce, and salt to taste for at least 2 hours. Remove from marinade and drege chicken in flour. Fry.

Chicken Seasoning Mix


2 tb Salt
1 ts Black pepper
1 ts White pepper
1/2 ts Red pepper
2 ts Garlic powder
2 ts Onion powder
1/4 ts Ground bay leaves
1/4 ts File powder
3/4 ts Sweet basil
1/2 ts Paprika

Instructions:
Mix all ingredients together well. Store in a tightly
covered glass jar for use as needed. Excellent for
seasoning any poultry dishes. Use as you would any
seasoning mix, and do not add extra salt to the dish.

Well, just using salt, pepper and a little bit of garlic powder mixed into the seasoning flour is all that is really necessary! Add a pinch of cayenne pepper if you want a little bit of heat.

An alternative is to use a seasoning salt, such as Lawry's Seasoning Salt, in place of the salt and pepper.

You can make your own seasoning salt. Here is a recipe from Paula Dean (Food TV host) for her seasoning salt:

Lady & Sons House Seasoning:
1 cup table salt
1/4 cup EACH: garlic powder, black pepper

Mix the ingredients, store in airtight container. Mix with the flour you use to coat the chicken or sprinkle directly on the chicken before coating with flour.

"All-Purpose Spice Blend"

1 tbsp. dry mustard
1 tbsp. onion powder
1 tbsp. paprika
1 1/2 tsp. pepper
1 tsp. garlic powder

"All That Jazz Seasoning" (Cajun flavor) - 1 cup

1/4 cup garlic powder
1/4 cup onion powder
2 tbsp. paprika
1 tbsp. ground red pepper
1 tbsp. black pepper
1 1/2 tsp. celery seeds
1 1/2 tsp. chili powder
1 tsp. salt
1 tsp. lemon pepper
1/2 tsp. ground nutmeg

Combine and store in an airtight container.

slice chicken breast
2 eggs with hot sauce
and use italian bread crumbs with parsley and garlic and parmesan cheese
dip chicken into egg and hot sauce mixture
then into bread crumbs and then deep fry them in vegetable oil in fryer
serve with fries and onion rings
or hot wing 4 pound bag deep fry and or use drumsticks or thighs
