Strawberry Cheesecake in a Glass
1 pint basket California strawberries, stemmed and sliced
3 tablespoons currant jelly or 2 tablespoons granulated sugar
8 ounces light cream cheese, softened
3 tablespoons skim milk
2 tablespoons lemon juice
2 tablespoons granulated sugar
1 cup light whipped topping
1 cup graham cracker crumbs
In bowl, toss strawberries with jelly; cover and set aside.
In mixer bowl, beat cheese, milk, juice and sugar until smooth, fold in whipped topping.
Spoon 2 tablespoons crumbs into each of four 8 to 10-ounce stemmed glasses; top each with about 1/4 cup of the strawberries, 1/2 cup of the cream cheese mixture, then the remaining crumbs and strawberries, dividing equally. Serve immediately or cover and refrigerate up to 6 hours.
Makes 4 servings.
Bacon and Onion Bite-Sized Quiche
8 slices bacon
1/4 pound fresh mushrooms, chopped
1 tablespoon butter
1/3 cup chopped green onion
1 2/3 cups shredded Swiss cheese
Pastry for double-crust pie (homemade or purchased)
5 large eggs
1 2/3 cups sour cream
Heat oven to 375 degrees F.
On a lightly floured board, roll out the pastry dough 1/ 16-inch thick. Using a 3-inch cutter, cut out 42 circles; re-roll scraps as needed. Fit circles into bottoms and slightly up sides of lightly greased 2 1/2-inch muffin pans.
Meanwhile, fry bacon slices until crisp, drain; crumble or chop.
Chop mushrooms, saute in butter until limp and liquid evaporates.
Combine bacon, mushrooms, green onion and cheese.
Divide filling equally among muffin cups.
In large bowl, beat together eggs, add sour cream and stir until smooth. Spoon about 1 tablespoon into each muffin cup.
Bake until puffed and light brown, 20 to 25 minutes. Cool in pans 5 minutes; lift out.
Serve warm or let cool on wire racks.
Makes 3 1/2 dozen.
Marinated Tenderloin Finger Sandwiches
1 package Honeysuckle White Breast Tenderloin (rotisserie, homestyle, OR lemon-garlic)
2/3 cup mayonnaise, reduced fat
2 tablespoons Dijon mustard
1 1/2 pounds Swiss cheese, sliced thin
2 loaves foccacia bread, halved horizontally (8 to10-inch rounds) OR use 2 loaves onion foccacia bread, halved horizontally (8- to 10-inch rounds)
Preheat oven to 325°F. Bake Turkey Breast Tenderloin in pan for about 50 to 60 minutes, or until internal temperature of the meat reaches 165°F. Remove from the oven and let cool slightly. Slice into 1/4-inch thick slices.
In a small bowl, combine mayonnaise and mustard. Spread all sides of the foccacia loaves with the mayo mixture. Stack turkey and cheese slices on 2 of the foccacia halves. Refrigerate any unused turkey. Top these with the other foccacia halves. With a sharp bread knife, slice the sandwiches into thin pie wedges. Secure with party toothpicks, and place on a non-stick cookie sheet. Place under the broiler for a minute, or until the cheese melts. Serve hot.

Appetizer : Asparagus wrapped with ricotta cheese an ham.
Steam Asparagus or microwave it until tender,drain and
let cool .In as mall bowl combine cheese (4oz), crushed garlic (1/4 tsp),finely chopped onions or chives (1tsp) and salt and pepper to taste.Mix well.Spread evenly over each slice of cooked ham .Top each with 2 or 3 asparagus and roll up.Place on baking sheet and bake until hot!
Dessert:Little chocolatee pots.You need 11/2cups of milk,2 cups of chocolat chips,2 eggs,1/4 cup of sugar and pinch of salt.
Pour milk into a saucepan and heat to boiling.Combine remaining ingredients in a blender.Pour in hot milk,blend on low speed for one minute or until smooth.Put in little pots.Chill for at least 2 hours before serving.Garnish with chopped nuts or whipped cream.
Finger sandwiches.Any sandwich would do. Load with ham cheese,lettuce,onions or what ever u want.Cut them triangular
shapes and put them on a with lettuce leafs covered platter and
put some cherry tomatoes around it ( just 4 colour )

Dessert-.Ambrosia fruit salad(makes a lot!)
1 20oz can pineapple tidbits
2 regular sized cans of light fruit cocktail
1 small can of mandarin oranges
1 8oz container of light sour cream
1 small tub of cool whip
2 small boxes of sugar free White Chocolate Jell-O Pudding
Half a bag of mini marshmallows
Drain all fruit, but save 1 ½ cups of juice.
In a large bowl add the 1 ½ cups of juice and gradually stir in both packages
of pudding mix. If you add it all at once it gets clumpy. When it’s all mixed in it should look like custard
Stir in the sour cream. Then add fruit about 1 quarter at a time. Stir in cool-whip.
Then stir in marshmallows. (add some chopped pecans to taste if you like).
Chill for 2-3 hours and serve
Appetizer-pickles with ham
you get slices of ham and spread cream cheese on them and place a whole clausen or boars head pickle on it and roll the pickle in the ham like pigs in a blanket. then you slice in 1/2 inch sections.
finger sandwiches- chicken salad sandwiches
chicken cut up season with creole seasoning and cook, 1 T. mayo for every cup,1T.sour cream for every cup of chicken and celery(however much you prefer) mix it up and put on bread. oh soo yummy.

Method :
* Plain Paste Crust: Mix flour and salt in large bowl. Add butter and lard work quickly into flour with pastry cutter, fork or hands until flour resembles coarse pebbles. Add cold water and work dough with hands just until dough forms. Knead dough on floured board 5 minutes then roll out to about 1/8-inch thickness.
* Line 9-inch round pie pan with dough. Remove excess dough from edges. Fill unbaked pie shell with dried beans or pie weights. Bake at 350 degrees 5 minutes. Remove from oven and set aside.
* Pumpkin Pie Filling: Mix pumpkin puree, flour, eggs, milk, sugar, ground ginger, cinnamon and salt and pour into baked crust. Bake at 350 degrees until pie surface is smooth and knife inserted in center comes out clean, 1 hour to 1 hour 15 minutes. Refrigerate pie 1 hour before serving.
* This recipe yields 8 servings.

Ingredients:
18 to 24 vanilla wafer cookies
2 packages (8 oz. each) cream cheese, softened
1-1/4 cups sugar
1/3 cup HERSHEY'S Cocoa
2 tablespoons all-purpose flour
3 eggs
1 container (8 oz.) dairy sour cream
1/2 teaspoon almond extract
SOUR CREAM TOPPING(recipe follows)
canned cherry pie filling, chilled
Directions:
1. Heat oven to 325°F. Line muffin cups (2-1/2 inches in diameter) with foil bake cups. Place one vanilla wafer (flat-side down) in bottom of each cup.
2. Beat cream cheese in large bowl until smooth. Add sugar, cocoa and flour; blend well. Add eggs; beat well. Stir in sour cream and almond extract. Fill each muffin cup almost full with batter.
3. Bake 20 to 25 minutes or until set. Remove from oven; cool 5 to 10 minutes. Spread heaping teaspoon SOUR CREAM TOPPING on each cup. Cool completely in pan on wire rack; refrigerate. Just before serving, garnish with cherry pie filling. Cover; refrigerate leftover cheesecakes. 1-1/2 to 2 dozen cheesecakes.
SOUR CREAM TOPPING: Stir together 1 container (8 oz.) dairy sour cream, 2 tablespoons sugar and 1 teaspoon vanilla extract in small bowl until sugar is dissolved.
Appetizer, Simple
Go to the deli in your grocery store, have them slice up some smoked turkey and some pepper jack cheese. Take it home. Lay out the turkey and put the cheese on it. Roll it up. Cut it at about 1/4 to 1/2 inch, or however big you want them.
Or if you have a small crockpot, get some Lil Smokies and BBQ sause, put them in the crockpot, simmer till warm, serve with toothpicks.
Finger Sandwiches
Prosciutto and Mozzarella Sandwiches Recipe courtesy Gourmet Magazine
1 large plum tomato
3 tablespoons black olive paste
1/4 cup chopped fresh basil leaves
1 pound fresh mozzarella
4 cups trimmed arugula
Salt and freshly ground black pepper
2 tablespoons extra-virgin olive oil
1 store-bought focaccia
1/2 pound thinly sliced prosciutto
Seed tomato and chop fine. In a bowl stir together tomato, olive paste, and basil. Cut mozzarella into thin slices. Coarsely chop arugula and in a bowl toss with oil, salt, and pepper, to taste.
Halve focaccia horizontally and spread bottom half with olive mixture. Top olive mixture with mozzarella, prosciutto, arugula, and remaining focaccia half. Press focaccia gently and cut lengthwise in half and crosswise into thirds to make 6 sandwiches. Cut sandwiches diagonally in half and wrap tightly in plastic wrap. Chill sandwiches at least 1 hour and up to 1 day.

1 1/4 cups coarsely grated provolone
1 1/4 cups coarsely grated mozzarella
1 French baguette, about 20 inches long
1/2 cup Emeril's Kicked Up Tomato Sauce or your favorite red pasta sauce
1/4 teaspoon Baby Bam, recipe follows
1/4 cup pepperoni slices (about 16 slices)
1/4 cup finely grated Parmesan
Crushed red pepper, optional
Position rack in center of oven and preheat the oven to 325 degrees F.
Combine the provolone and mozzarella cheeses in a small bowl.
Carefully cut the baguette into 4 (5-inch-long) sections.
Cut off the top third of the bread horizontally and reserve top for another use. Using your fingers, gently scoop out and discard some of the soft, inner part of the bread, leaving a 1-inch shell.
Spread the tomato sauce evenly among the bread shells, about 2 tablespoons for each sandwich, and sprinkle with the Baby Bam. Divide 2 cups of the cheese mixture among the 4 sandwiches and arrange the pepperoni slices evenly on top.
Place the sandwiches on a baking sheet and bake until the filling is heated through, about 20 minutes.
Using oven mitts or pot holders, remove the baking sheet from the oven, sprinkle the sandwiches evenly with the remaining cheese mixture, and return to the oven. Bake until the cheese melts, about 5 minutes.
Using oven mitts or pot holders, remove the baking sheet from the oven and sprinkle each sandwich evenly with some of the Parmesan. If you like, you can sprinkle with crushed red pepper for a spicy Pizzazy Pizza Sandwich (a pinch should be just right).
Baby Bam:
1/2 teaspoon celery salt

1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon ground black pepper
2 teaspoons garlic powder
2 teaspoons onion powder
2 tablespoons dried parsley
2 tablespoons salt
3 tablespoons paprika
Place all the ingredients in a small mixing bowl and stir well to combine, using a wooden spoon. Then store in an airtight container for up to 3 months.
Yield: about 3/4 cup
