Enchilada Breakfast Casserole
12 oz can SPAM - cubed 1/2" 4 eggs
1 small onion chopped 2 cups whipping cream
1 small green pepper, chopped 1 tbsp all-purpose flour
1 small tomato, chopped 4-oz can diced green chiles
2 cups shredded Cheddar cheese 1/4 tsp garlic powder
8 7" flour tortillas Picante sauce
Place about 1/4 cup SPAM, 1 tablespoon onion, 1 tablespoon green pepper, 1 tablespoon tomato and 1 tablespoon cheese on one side of tortilla. Set remaining cheese aside. Roll up jelly-roll fashion; place seam side down in greased 13x9" baking dish. In small bowl combine remainin ingredients; blend together with wire whisk. Pour over ehchiladas. Cover; refrigerate overnight. Heat oven to 350. Bake, uncovered, for 40 to 50 minutes or until egg mixture is set. Sprinkle with remaining cheese. Return to oven; bake for 5 minutes or until cheese is melted. Serve with picante sauce. Yield: 8 enchiladas.

Barbecued Kabobs

4smred potatoes halved

1canSpam luncheon meat - (12 oz) cubed
8xmushrooms
Method :
* In small saucepan, saute onion in oil until transparent. Add tomato juice, brown sugar, vinegar, and cayenne; bring to a boil. Lower heat and simmer barbecue sauce, uncovered, 10 minutes.
* Wash potatoes but do not peel. Cook in small amount boiling salted water until tender; drain. Seed and cut green pepper into 16 pieces. Cut each onion into 4 wedges.
* Alternate potato, green pepper, Spam, mushrooms, and onions on long skewers. Place on broiling pan; brush with barbecue sauce. Broil at least 3 inches from heat source 15 minutes, turning and brushing with sauce after 5 and 10 minutes.
* This recipe yields 8 skewered kabobs.
* Yield: 8 kabobs

SPAM SUSHI (HAND ROLL)
Spam strips, cooked Sato-Shayu style
Sushi rice
Nori (seaweed used to roll sushi)
Cucumber sticks
Radish sprouts
Takuwan strips (Japanese pickled radish)
Wasabi (Japanese horseradish)
SUSHI RICE:
Wash and cook 3 cups Calrose rice. While still hot, season with Vinegar Sauce, or use packaged sushi mix such as Sushi!-No-Ko.
VINEGAR SAUCE:
1/2 cup Japanese rice vinegar
1/2 cup sugar
1 teaspoon salt
Cook until sugar dissolves. Cool. Sprinkle half of vinegar sauce over hot rice; mix gently. Add more vinegar sauce to taste. Or follow instuctions onpackage mix.
SATO-SHOYU STYLE:
Spam sliced or cubed.
SAUCE:
1/4 cup shoyu
1/4 cup sugar
1/4 cup mirin (Japanese sweet rice wine)
Bring sauce to a boil in a small pan. Add Spam, lower heat, and cook 2-3 minutes.
TO ASSEMBLE SUSHI:
Cut a sheet of nori in half. Place nori on your left hand; add a small amount of rice. Add Spam and all or some of the other ingredients. Wrap nori around the filling and toll from left to right.

Hot and Spicy SPAM Cassoulet
1 1/2 cups crushed cheese-garlic croutons
5 Tbsp olive oil
2 cups finely chopped onions
2 tsp garlic, crushed
1 cup thinly sliced carrots, 1/8 inch thick or less
1/2 tsp ground cloves
2 cups chunky spaghetti sauce
1 cup sweet chili sauce
1 12-oz. can SPAM Hot & Spicy, cubed (When slicing, cut SPAM in thirds lengthwise, turn slices 1/4 turn, cut in thirds again lengthwise, making 9 sticks, then cube by cutting crosswise.)
3 15-oz cans great northern beans, with 1 C drained liquid
Cooking Directions
Preheat oven to 400 degrees F. Combine 1/2 cup crushed croutons and 2 Tbsp olive oil together in a small bowl. Set aside. Rotate 3 Tbsp olive oil in a large, heavy skillet. Add onions, garlic and carrots. Stir ingredients to coat with oil. Sprinkle with cloves. Cook over medium heat, stirring frequently, adding water a tablespoon at a time, as necessary, to keep from sticking. Continue cooking and stirring until onion is softened, about 6-8 minutes. Cut up SPAM and stir together. Continue cooking until onions begin to caramelize, about 3-4 minutes. Add spaghetti sauce, 1/4 cup sweet chili sauce, and 1 cup crushed croutons and stir together. Remove from heat. While onion mixture is cooking, in a 2 quart saucepan heat beans with 1/2 cup of the can liquid and 3/4 cup sweet chili sauce over medium heat, stirring occasionally, about 5 minutes. Remove from heat. When SPAM mixture is done, stir beans mixture into SPAM mixture. Pour or ladle mixture into a 3 quart, deep, oven-proof container. Sprinkle the top with crushed crouton-olive oil mixture. Bake in oven for about 15 minutes or until topping is browned. Remove from oven. Serves 6.

We had this once in a while growing up. Slice in slabs, fry it in butter and eat it on a sandwich, with mayo and lettuce.

mostly we just ate it cold on sandwhiches,, it's kinda like balonga or ham,,
I have also baked it with a brown sugar/mustard glaze for something different,, and we had it after it cooled on crackers.
