Easy Lemony Fish
1 lb Fish Fillets, (flounder, fluke, etc. or fish of your choice)
1/4 cup Chicken Broth
4 x Lemon Slices (4 to 6)
20 x Sprays Imitation Butter Spray (such as I Can't Believe Its Not Butter spray)
I use a nice lump of butter here, melted in the baking dish.
1/8 tsp Pepper, or to taste
1 tbl Dried Parsley
Notes: Never overcook. Cooking fish at too high a temperature or for too long a time can toughen the fish and destroy natural moisture and flavor.
Overcooking is the most common mistake in fish and seafood cookery. Fish loses its translucent appearance and becomes opaque when thoroughly cooked. Pierce the fish at the thickest point. If it flakes easily and the flesh falls from the bones, you know it is done.
Preheat oven to 450 degrees. Arrange fish in a 9 x 13" baking dish. Top with
remaining ingredients. Bake fish, uncovered, for 10 minutes per inch of thickness, or until fish flakes easily with a fork.
STEAMED VEGGIES (EASY)
Heat up some water in a pan, place veggies of your choice in a steamer.
Throw in some baby carrots, califlower and/or brocolli florets, cook till tender but somewhat crunchy, pour off the water, add a bit of seasoning if desired.
BAKED CHICKEN WITH CREAM GRAVY
1 (3 lb.) fryer or you can use just breasts or legs and thighs
1 stick butter
lg. can Carnation Evaporated milk
Flour
A little salt and pepper as desired.
Shake chicken in paper bag with flour. Melt butter in baking dish in oven. Remove and lay chicken, skin side up, in dish with butter. Pour milk over all and a little water. Bake at 375 degrees for 45 minutes to an hour, adding a little water as needed. Turn chicken over during baking.
Serve with rice or mashed potatoes. This cream gravy is very good.

Take a large square of aluminum foil and fold up the sides to make a package shape. Place a boneless chicken breast in the center and season with whatever you might fancy that day -- barbecue sauce, lemon pepper, garlic butter, or whatever.
Place a couple of brocolli spears, a peeled and quartered potato, a sliced carrot, and a few slices of onion (if you like it) around the chicken. Dot the veggies with butter and sprinkle with salt and pepper.
Fold up the foil to form a tight package, and bake at 350 degrees until the chicken juices run clear and the veggies are done. (About 25 to 35 minutes.)
This is an easy and delicious recipe with minimum cleanup afterwards. You can also cook a salmon fillet the same way with dill butter or lemon pepper as the seasoning.

There are so many good recipes for chicken, fish and vegetables. The easiest fish recipe I know is Fish in Foil: You make aluminum foil packets, put a fish filet (I think I used tilapia) in one, top with a small amount of butter (a teaspoon, maybe?) and close the foil packet (not too tight - give it a little room) and bake for 15-20 minutes.
AllRecipes has great recipes. So do Campbells (Soup), Reynolds (Aluminum foil) and Pillsbury.

Since you're probably going to get a lot of recipes/ideas, here's everything you asked for in one dish...
"Spinach Crab Chicken" - 4 servings
1/2 cup finely chopped onion
1/4 cup chopped fresh mushrooms
1/4 cup finely chopped celery
3 tbsp. butter
3 tbsp. all-purpose flour
1/2 tsp. salt; divided
1 cup chicken broth
1/2 cup milk
4 boneless skinless chicken breast halves (6 oz. each)
1/8 tsp. white pepper
1/2 cup dry bread crumbs
1 (6 oz.) can crabmeat; drained, flaked and cartilage removed
12 fresh spinach leaves; chopped
1 tbsp. minced fresh parsley
1 cup (4 oz.) shredded Swiss cheese
Hot cooked rice
For sauce, in a skillet, saute the onion, mushrooms and celery in butter until tender. Stir in flour and 1/4 tsp. salt until blended. Gradually add broth and milk; bring to a boil. Cook and stir for 1-2 minutes or until thickened. Remove from heat.
Flatten chicken to 1/4" thickness; sprinkle with pepper and remaining salt. In a bowl, combine the bread crumbs, crab, spinach and parsley; stir in 1/2 cup sauce. Spoon 1/4 cup down the center of each breast half. Roll up; secure with toothpicks. Place seam-side down in a greased 13x9x2" baking dish. Top with remaining sauce.
Cover and bake at 375* for 35-45 minutes or until juices run clear. Sprinkle with cheese. Broil 4-6" from heat for 5 minutes or until lightly browned. Discard the toothpicks. Serve with hot cooked rice.

grill salmon with herb seasoning crust and serve with steamed red peppers broccoli carrot strips and green peppers
how about grill shrimp and mix into a salad with balsamic vinergrette on top and pea pods and red cabbage
how about grilled chicken breast with cheddar on top and serve with brown rice and corn
how about tuna with lemon and broccoli and serve with white rice
how about grounded chicken and make burger patties with add onion and alittle parsley and garlic to the mixture grill them and serve on whole wheat buns and serve with steamed baby carrots and have broccoli au graten rice or cajen style rice with it
