Grilled Pork Chops - New Orleans

Mix as a marinade: 1 tbsp Worchestershire, 1/2 cup dry red wine, 1 tbsp Tabasco (I triple this), 1 tsp Thyme, 1tsp black pepper, 3 gloves crushed garlic. Marinade 4 thick boneless piggy-chops in this for 2-12 hours

Grill or pan sear to a medium rare. Salt to taste.

Serve with Green Onion Pasta and a tomato salad.

Fast, easy and tasty:

Put just a little bit of olive oil into a hot pan. (Barely enough to cover the bottom of the pan.)

Add the pork chops and "kiss" them brown on each side. Remove them from the pan.

Add about 6-8 ounces of pineapple juice to the pan (be careful, it might spatter a little bit if the pan is still really hot). Use this to de-glaze the pan.

Put the pork chops back in, turn the heat low and simmer for about a half-hour. About halfway through, turn them over and add salt and pepper to taste.

Enjoy! (Hope the juice doesn't count as sugar)

Start by brining the pork chops - soaking in cold salted water for 3 or more hours (tenderizes the pork and makes it more digestible). Add 5 tablespoons salt to one cup water. Drain wipe dry and start cooking.

Then you can brown the chop in some olive oil or vegetable oil. I add soy sauce and a little orange juice cook until the sauce thickens somewhat and serve. Do not undercook pork.

No Starch? That eliminates, Rice, Potatoes and Stuffing. No Sugar? Well no BBQ, or Asian sweet and sour. No Dairy, so much for the Cream sauces. Just fry them up and choke them down.

They can be very good if you just brown in a little oil, salt and pepper both sides to taste, add a cup or two of water or broth to the skillet, cover and simmer/braise until done, maybe 30 min.
