When I make eggs I tend to go for either the basics fried eggs (broken yoke) or scrambled eggs with cheese I want to know if anyone knows any ways to spice up either of these two basics?? I've tried oregano didn't work and I tend to use salt n pepper quite a bit what else could I do?

A good ingredient to add to scrambled eggs is chives. Gives the eggs a nice onion flavor. Tabasco sauce, crushed red pepper flakes, or a sprinkle of Cayenne are good. These ingredients do not take away from the eggs, but add a great flavor. For fried eggs, keep it simple with just a dash of Tabasco and salt and pepper.

Saute some green peppers, mushrooms and onions in a fry pan with some butter or olive oil you can also add some tomato if you wish and/or some pre-cooked potato and crumbled cooked bacon or sausage. Add some eggs you have whipped with one tablespoon of milk or cream per egg. Let it set initially and keep pushing the outside toward the inside. When it is set add some grated cheese and/or breadcrumbs on top and put under the broiler for a few minutes: Delicious.

My boyfriend loves my egg scramble. I take eggs fresh from his parents farm & scramble in a small bowl ( I use 3 or 4 eggs ) add a splash of 1/2 & 1/2, fresh ground pepper & a tablespoon sour cream. Whip with fork or wisk til mixed well. In medium skillet, melt 2 tbsp butter. To that add chopped onion & bell pepper, sautee for a few minutes, then add egg mixture, sliced mushrooms & diced roma tomatoes. Cook over medium heat stirring often til eggs are almost set. Sprinkle shredded cheese & stir into eggs....Serve warm with homemade bisuits......

I make what my friends call scrambled omelettes. You can add anything you want, hot peppers, green peppers, tomatoes, zuchini, onions, chives, ham, mushrooms, even bean sprouts. Just add them directly to your scrambled egg mixture, unless you want them more tender, then add the veggies to the pan and saute for a minute or two before adding the egg mixture. If you want cheese, just wait until they are done, add whatever cheese you want to the top, cover for a minute until cheese starts to melt. My favorite Mexican Restraunt serves an incredible scrambled egg dish that includes, shredded seasoned beef, tomatoes, zuchinni, and jalapenos!!!!! As for fried eggs, I usually just serve them with thick slices of tomatoe under them.

Try this recipe: Dice up the ripest tomato you can find. Saute the tomato until the skin starts to roll. Add sliced onions. Salt and Pepper according to taste. Then add your whisked eggs to the tomato and onions. Scramble and enjoy! (The tomato will give the dish such sweetness.)

I dust my fried eggs with a bit of curry powder.

I like my scrambled eggs with a healthy shot of Tabasco.

I always top a cheese omelet with a big spoonful of Salsa fresca.
