In the olden days people could not buy sweets at stores, so they made their own. Fudge is a usually mixture of chocolate cocoa powder and sugar with butter, milk and a pinch of salt. Some people add nuts to fudge; some don't. Sometimes fudge can be made of peanut butter, brown sugar, etc. but the most common fudge is chocolate. There are different schools of fudge appreciation: some like it smooth, some like it hard and grainy; some like it with nuts, some like it without, some put nuts and tiny marshmallows in their fudge.

Here is a very smooth fudge recipe using Marshmallow cream. It is also good to put Nutella into fedge.

INGREDIENTS

* 1 (7 ounce) jar marshmallow creme
* 1 1/2 cups white sugar
* 2/3 cup evaporated milk
* 1/4 cup butter
* 1/4 teaspoon salt
* 2 cups milk chocolate chips
* 1 cup semisweet chocolate chips
* 1/2 cup chopped nuts
* 1 teaspoon vanilla extract

DIRECTIONS

1. Line an 8x8 inch pan with aluminum foil. Set aside.
2. In a large saucepan over medium heat, combine marshmallow cream, sugar, evaporated milk, butter and salt. Bring to a full boil, and cook for 5 minutes, stirring constantly.
3. Remove from heat and pour in semisweet chocolate chips and milk chocolate chips. Stir until chocolate is melted and mixture is smooth. Stir in nuts and vanilla. Pour into prepared pan. Chill in refrigerator for 2 hours, or until firm.

It is a very yummy mixture of chocolate or peanut butter and sugar and butter. Once it is set, it can either be a soft fudge, or a hard fudge, then cut into squares and eaten... it is very rich and very sweet...

I forgot to add that it usually has either marshmallows or marshmallow cream in it too and sometimes nuts

It's not easy to make. You have to cook the ingredients while stirring constantly. As the mixture gets thicker, it becomes harder to stir, but it's not done until the mixture is semi-solid, not liquid.

Oh, and my favorite fudge is divinity (white chocolate) with nuts. Yum!!!

fudge itself is made of evaporated milk, sugar and butter. you can flavor it with chocolate or vanilla or anything else.

fudge in the name of processed food like fudge stripe cookies usually just means processed chocolate.
