I wondered the same thing!! When I lived in NC for a year I bought havati cheese because it was yellow, like cheese should be. Orange cheese. I think, is only in USA. Will be intersted to see what you find out

They also have white cheddar cheese. Its the food coloring used.

a lot of human beings used to think of that orange cheddar became richer than white cheddar. It became initially colored with carrot juice and now's colored with annato or different nutrition colouring.

Sometimes it is the natural fermentation of the milk solids but most often it is because a reddish food dye called natural spice called annato is added to the milk to make the cheese yellow.

its stuff called annatto -- its used in carribean yellow rice instead of saffron like in spain. its got a distinct light taste that makes up for the bland taste of over-processed cheddar.
