I'm making boneless skinless chicken breast, marinating it in balslamic vin. and lemon juice. I'm putting bits of garlic in a sliced part of the chicken. I know that much is healthy... but I'm putting it in a roasting pan for an hour. Is that okay? Whatever juice comes out, can I spoon it back on top of the chicken? Is that still healthy? Does it sound good?

Yes. But I think an hour is a bit too long. Maybe 20min. to a half hour.

cooking longer when using dry heat like the oven doesn't make the meat more tender like boiling does, so cook it just until the thermometer says it is done! 180 degrees for chicken i believe. I cook mine like this all the time, and it tastes delicious. sometimes I take it and flatten it out with a mallet and fill it with spinach and garlic with a tiny little bit of Parmesan cheese. Then roll it up and pin it with a toothpick, and roll it in a bit of salt and fresh cracked pepper and bake till pretty golden brown. sometimes I will use the spray oil just a little to help it get browner, since canalization adds lots of flavor! Great low fat meals, that have tons of flavor! You can also use the powdered italian dressing mixes you get in the grocery store that you are supposed to make yourself, and just omit the oil and put in a baking dish and cook.

its too long to cook it about 30 minutes at 350 and dont you think that is quite a lot of garlic in the slits of a breast i do it with a large roast for such a small piece of meat it would be better to add to marinated just my opion...just dont want the garlic to over power your chicken flavor...

All of your added ingredients are healthy.
As far as basting with the juices, it's no different than basting your Thanksgiving turkey.
Not only does it sound good, but what time is dinner?

it sounds dry. cook it for about 1/2 the time. most of the chicken fat comes off when you skin it. usually chicken is only unhealthy if you add fat -- like deep fried.
