Fresh green beans or canned whatever you have.Tossed with a little butter.
You can also stuff the chicken with a stuffing mixture (ie; chicken stove top stuffing and or place it on the side
Satueed button mushrooms.Sauteed in butter and garlic.You can also use just butter, or rosemary.Be creative with what you have in the spice cabinet.
Antipasta, or regular pasta's like alfredo, parmasean, or angle hair will do.
Aspearagus would be lovely too.
Or just something as simple as a ceaser sald on the side.
When I roast chicken and new potatoes.I go with something as simple as a ceaser salad.Dole has a great premade ceaser.Its light and a little tangy but complements roasted chicken very well.I get rave reviews all the time.If you dont like ceaser go with a house salad or a salad dressing you prefer.

Assuming you don't want to just microwave some frozen veggies
You can bake squash at the same time. Cut it in half and top with a little butter; add brown sugar, salt and pepper as desired. If it starts to get to dark before it is done/the chicken is done just put some foil over the top.
Basically any veggie casserole would also work.

It sounds very yummy, but quite complex... who is the caterer, and be very careful with sit down meals, its hard to keep the meals warm and fresh. Try to make it buffet. One thing that I might question is two seafood app's, and mabey over doing the veggies with the tray, two salads, potato's, green beans, there is no wrong or right really but if you are feeling overwhelmed, make it easier on yourself. It's your big day, and all you really should focus on is being a beautiful princess, so if you decide to keep all the dishes, just make sure you have a specific team to keep it fresh. I am helping my sister plan her wedding right now, I am a floral designer so menu's aren't really my forte, but have seen a lot of menu's and styles. Do what makes you happy. Asparagus spears, cooked and then cooled and marinated in raspberry or other favorite vinaigrette. If you really want to be fancy, tie the spears together in bundles of two or three with a ribbon cut from a pimento.
Fruit salad -- diced apples, sliced bananas, coconut to taste, walnuts or pecans, and a dressing made of Miracle Whip with a little orange juice and honey to thin it.
Garlic cheese bread -- cut a loaf of French bread in half horizontally. Spread both cut halves with butter, then sprinkle with minced garlic and shredded mozzerella cheese. Bake at 400 degrees until cheese is melted.
