Broiling is when the food item is roasted uncovered on top (no heat from the bottom - that is baking). You can broil fish and chicken in a toaster over if you have a "broil" setting, just put the rack down low so the food does not burn on top. The beauty of broiling is the meat or bread cooks quickly and develops a lovely golden brown color, but you do have to turn the item at least once to get it browned on both sides. Dot with butter or olive oil, salt, pepper and lemon juice on fish, sometimes breadcrumb topping makes a pretty golden brown dish. Careful not to overcook.
