I just made some chili 2 days ago and it was awesome. Here's my recipe (makes about 5-6 servings): start by sauteeing chopped yellow onion and a tablespoon of minced garlic (found in produce dep't of grocery store). Once that is a little brown, crumble in 1 lb of ground beef. Add seasonings such as salt, seasoned salt, white pepper, and a dash of cayenne pepper. Once the beef is all browned, drain the fat and add 1 can of diced tomatoes (Hunts or Del Monte i think makes a type that is "Chili ready") and add 1 can of the following: Great Northern Beans Light Red Kidney Beans Pinto Beans ½ can of Dark Red Kidney Beans And sometimes i add a small amount (½ cup) of tomato sauce Add a little water and let simmer for 30 mins. Add more seasons if necessary EAT AND ENJOY!!!

* Everybody knows that there is no such thing as a 19-alarm fire. Why, that would mean that babies, lifeguards, bartenders, everyone, would have to show up to fight it! However, Frank Jacobson of the Chicago Fire Department thinks his chili requires 19 alarms. I am ready!
* Please note that he makes this in small batches. If you do not know what a #10 can is, figure on just under a gallon.
* In a large pot bring the tomato puree and whole tomatoes to a slow boil.
* While this is heating, brown the ground beef with chopped onion. Add this to the tomato mixture. Add chili powder and simmer for 1 hour. Add oregano, salt, and pepper to taste and simmer 15 minutes. Add kidney beans and simmer 30 minutes.
* Serve in a bowl with Cheddar cheese on top and a dollop of sour cream placed in the center. Diced yellow onions complete the garnish.

You've probably already eaten by now, but I thought beer was a good idea. When you want to bring (not take) out the heat of your chili, pour a little vinegar in the pot.
Here are a couple of spice blends for future dishes...
"All-Purpose Spice Blend"
1 tbsp. dry mustard
1 tbsp. onion powder
1 tbsp. paprika
1 1/2 tsp. pepper
1 tsp. garlic powder
1 tsp. dried thyme
1/2 tsp. dried basil
Mix and store in an airtight container.
"All That Jazz Seasoning" (Cajun flavor) - 1 cup
1/4 cup garlic powder
1/4 cup onion powder
2 tbsp. paprika
1 tbsp. ground red pepper
1 tbsp. black pepper
1 1/2 tsp. celery seeds
1 1/2 tsp. chili powder
1 tsp. salt
1 tsp. lemon pepper
1/2 tsp. ground nutmeg
Combine all ingredients; store in an airtight container.

Well if it's already made, try adding some of the spices in this recipe. Yeah, I was skeptical at first too but,it turned out to be pretty good. Not your regular chili.
5 Way Cincinnati Chili
1 1/2 lb ground sirloin
2 med onions, chopped
1 x celery ribs, chopped
4 lrg cloves, garlic, minced
2 tbl good-quality chili powder
1 tbl paprika
1/2 tsp crushed dried basil
1/2 tsp crushed dried oregano
1/2 tsp crushed dried thyme
1 tsp ground cinnamon
1/2 tsp cayenne pepper
1/2 tsp ground cumin
1/2 tsp crushed red pepper flakes
1/4 tsp ground allspice
salt (optional)
freshly ground pepper
2 x (14 1/2 oz) cans no-salt-added diced tomatoes with their juice
1 x (8-ounce) can no-salt-added tomato sauce
1/2 x to 1 cup water
12 oz dried thin spaghetti
condiments
1 cup chopped onion
1/2 cup low fat shredded cheddar cheese
1 cup drained dark red kidney beans
In a large nonstick pot, brown ground sirloin, onion, celery, and garlic over medium heat, stirring occasionally, until beef is browned and vegetables are limp, about 10 minutes. Drain off and discard all fat.
Stir in chili powder, paprika, basil, oregano, thyme, cinnamon, cayenne pepper, ground cumin, red pepper flakes, and allspice. Season with salt (if using) and pepper to taste.
Stir in tomatoes and tomato sauce. Add 1/2 cup water, adding additional water as needed to reach desired consistency. Partially cover and simmer for 30 minutes. Transfer chili mixture to a freezer container and freeze until firm or cover and refrigerate overnight.
When ready to serve, defrost chili and reheat on the stove for at least 15 minutes while you cook the spaghetti, following package directions, to al dente.
Drain the spaghetti and keep warm. Place the chopped onion, shredded cheese, and kidney beans in small serving bowls.
To serve, divide the hot spaghetti between 8 shallow soup bowls. Ladle hot chili over each serving and pass the condiments separately to spoon onto each serving.

I always buy a package of pepperoni's and cut them in half with kitchen scissors and put that in my chili.
I don't care for pepperoni pizza, too greasy, but I love it in the chili.

And I am making chili also as we speak and I like to add diced tomatoes with halapeno"s. The longer you cook it the milder they get. Also, I lke to add my veggies, Celery, peppers and mushrooms during the last hour or so of cooking. Gives the veggies a little bit of a crisp taste.

I promise you - try a can of beer. It adds such a NICE taste. make sure you put the can of beer in when it still has a while to cook. When it cooks, the alcohol will dissipate, but the flavor will not. If you throw it in too close to serving time, it will be nasty.
