I am making a pumpkin pie out of freshly cut up pumpkin, and I need a good recipe, one preferably without evaporated milk, or if possible, a substitute for Evaporated Milk. I have no heavy cream or anything, all I have for dairy is some 1% milk.

I've made this many times with fresh pumpkin. It's really good.

You need a 9" unbaked pie crust, commercial or homemade.
preheat the oven to 425F

1 c cooked seived pumpkin
1/2 cup sugar
1t cinnamon
1/4t ginger
1/4t nutmeg
1/4t cloves
1 t vanilla
1c milk
2 eggs

separate the eggs and combine everything but the egg whites in a blender or mixing bowl.

beat the egg whites until they're stiff and then fold them into the rest of the filling.

Bake 10 minutes, then reduce the temperature to 375 and bake another 30 minutes until the filling sets.

Let it cool completely before you cut it.

If your pumpkin was previously frozen, reduce the milk to 3/4 cup or it will be too watery.

Use the 1% . Do you have any sour cream, cream cheese or yoghurt? add some of that to the milk to make it richer. Also, if you have any dried milk you can put a couple of tablespoons of it in the 1%.

Ummm, not to open a can of worms but did you bake that pumpkin and put the flesh through a sieve? because if you are just using raw pumpkin it will not work. Pumpkin has too much water in the flesh and needs to be cooked down. Cover the pumpkin in foil and bake at 350 for about an hour and 15 mins - depending on size of pumpkin.

Really, heavy cream is the best or use cream cheese softened with a bit of milk.

The only substitute that I know of for evaporated milk is Half & Half or light cream. Don't even try making the pie with 1% milk. It will be runny and unsatisfactory. I think a trip to the store is in order.

According to my substitution chart, 1 cup whole milk equals 1/2 cup evaporated milk plus 1/2 cup water.
Since you're using 1% milk, maybe you should substitute with at least 1 cup, plus some creamer.

Substitutes
For 1 cup (8 oz / 250 ml) Evaporated Milk, substitute 1 cup (8 oz / 250 ml) water plus 1 dry cup (4.5 oz / 125g) of powdered milk.

If you want to get away with evaporated milk, try soy milk instead. It's a healthier option.
