Olive is good because it has high content of monounsaturated fats (oleic acid) and polyphenols. Monounsaturated fats are regarded as being protective against cardiovascular diseases because it can reduce blood cholesterol level, and supply the good kind of cholesterol - HDL. Polyphenols are also good since they are antioxidants that may reduce the risk of cardiovascular disease and cancer.

Yes, you can still get the benefits even when its heated. Excessively heating will only evaporate the alcohols and esters which make up its delicate taste and fragrance. Heating olive oil will not change its health aspects, only the flavor.

depending the olive oil...
extra virgin from Greece and Italy it is like panacea
all are good for healthy diet..
and for your heart
as all oils when we use them in high heat then we have to don't use them again
exception the palm oil and that's why the use it in the restaurants,caterings etc.

I am Italian , I love olive oil. Extra virgin burns easily at high temps.

it is good for heart & petients having body pains. it cane be used on high heat.
