I boil them then add milk and butter to taste...and brown sugar to taste. Spray a baking dish with nonstick spray then layer half the sweet potato, some marshmallows, then repeat the layer with a good layer of marshmallows on top. Bakeat 350 uncovered until the marshmallows are melted and toasty all over.

CANDIED YAMS
This recipe was created for my ten-year-old friend and cooking student, Evan Chender, who used it for his Thanksgiving feast one year. Fresh ginger really spices up the sweet, meltingly tender yams.
2 pounds garnet yams or sweet potatoes
3 (2-inch) strips orange zest, white, spongy pith removed
2 cinnamon sticks, broken in half
1/2 cup freshly squeezed orange juice
1/3 cup pure maple syrup
2 tablespoons pure olive oil, light sesame oil, or unsalted butter
1 tablespoon freshly squeezed lemon juice
2 teaspoons peeled and finely chopped ginger root
1/2 teaspoon coarse sea salt
Preheat the oven to 375°F.
Peel and halve the yams crosswise. Cut each half lengthwise into 4 wedges.
Place the yams in a baking dish that will hold them in a snug single layer.
Tuck the orange zest and cinnamon sticks among the yams.
In a bowl, whisk together the orange juice, maple syrup, oil, lemon juice, ginger, and salt. (Note: if you're using butter, omit it in this step, but dot the assembled casserole with small pieces of it before it goes into the oven.) Pour the mixture over the yams.
Bake for 1 1/4 hours, basting every 15 minutes, until the yams are tender and glazed and the pan juices are syrupy.
Remove the orange zest and cinnamon sticks before serving.
Yield: 4 servings

Sweet Potato Pie
Yield: 6 to 8 servings
2 cups peeled, cooked sweet potatoes
1 1/4 cups sugar
1/2 stick melted butter
2 eggs
1 teaspoon vanilla extract or 1 to 2 tablespoons bourbon
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1 cup milk
9-inch unbaked pie crust
3 egg whites
Preheat the oven to 350ºF.
For the filling, using an electric hand mixer, combine the potatoes, 1 cup of the sugar, the butter, eggs, vanilla, salt, and spices. Mix thoroughly. Add the milk and continue to mix. Pour the filling into the pie crust and bake for 35-45 minutes, or until a knife inserted in the center comes out clean. Place the pie on a rack and cool to room temperature before covering with meringue.
For the meringue, using an electric mixer, beat the egg whites until soft peaks form; beat in the remaining 1/4 cup sugar 1 tablespoon at a time. Continue beating until the sugar dissolves and the mixture is glossy and stiff, but not dry. With a rubber spatula, spoon the meringue onto the pie, forming peaks. Make sure the meringue touches the crust all around. Sprinkle with a pinch of granulated sugar. Bake for 10-12 minutes, or until delicately browned. Cool and serve.

This is the recipe I use as a base. My daughter likes me to top with marshmallows. I like to add mandarin oranges. You can also add walnuts, rainsins and just about anything that soulds tasty to you.
Candied Sweet Potatoes (Yams)
6 med sweet potatoes
3/4 cup sugar
1/3 cup dark Karo syrup
2 1/2 tbl butter or oleo
1/2 tsp nutmeg
1/2 tsp cinnamon
3/4 cup water
1 tsp vanilla
Boil potatoes until tender, but not overcooked. ( you can use canned yams) Peel off skins. Cut in halves lengthwise. Place in baking dish. Add sugar, syrup, nutmeg, cinnamon, water and vanilla.
Dot top with butter or oleo. Bake in 375/o oven until thick syrup is formed. Baste frequently. About 45 to 55 minutes.

1/2 cup packed brown sugar
1 tbsp. grated orange peel
1/4 cup orange juice or water
1/8 tsp. ground cinnamon
Generous dash pepper
1/2 cup coarsely chopped walnuts (optional)
1) In 4-quart saucepan, place yams and salt; add water to cover. Over high heat, heat to boiling. Reduce heat to low; cover and simmer 3-40 minutes until yams are fork-tender. Drain; cool slightly; peel and quarter.
2) In same saucepan, combine butter, brown sugar, orange peel, orange juice, cinnamon and pepper; heat to boiling. Add yams and nuts; heat until yams are glazed, spooning sauce over to coat.
SWEET POTATO CASSEROLE: Use ingredients as above, but omit walnuts. Prepare as above in step 1. Butter 2-quart casserole. In large bowl with mixer at low speed, beat potatoes and remaining ingredients until light and fluffy. Spread potato mixture into prepared casserole. Top with 2 cups miniature marshmallows. Bake at 375* - 15 minutes or until topping is golden.

I boil mine, bringing the pot of water to a boil, then simmer until you can stick a fork in them. Let cool, peel skin off, slice and place in a Pyrex dish that has been sprayed with PAM. Sprinkle with brown sugar, Cinnamon and dot with butter. Cover with aluminum and bake about 30 minutes at 350 degrees.

take a can and drain them cover with some brown sugar and butter and bake in oven for about 45 minutes at 350 and then add to top marshmellows and just let them brown...candied yams
