Presuming you mean one of each category, my choices would be as follows:
Pistol: M1911A1 match tuned with lots of "hardball"
Rifle: It would be a toss-up ... M1903A3 as issued, or my Remington 700 Varmint in .308 (basically the Marine's M40) with target iron sights and a Weaver KT15 built up for 1000 yard shooting. The M1903A3 Springfield is accurate enough to either put deer on the table to 400 yards, or drop a man to 600 yards or so, plus the Springfield has the stripper clip guide cut into the receiver, which facilitates rapid reloading. The Remington 700 is just the most accurate rifle (excluding my built prior to purchase target rifles) I have ever bought off the shelf. Good for everthing from Varmint to Deer/Elk/Moose/Bear, and if need be, man to almost 1000 yards, if the shot needed to be taken.
Shotgun: Remington 870 with both a bird barrel (28 or 30") and a deer barrel (20" with rifle sights)
If you mean absolutely one and only one gun, and we are presuming we will use that gun to protect from the hell that breaks loose, while a rifle (M1Garand) would be a wise choice, I would take an M1911A1. The .45 would be appropriate for home defense, it would be authoritative, plus ... if evil were at the door, I could use the .45 to take evil's weaponry and ammunition, to use for the distances beyond close range.
Rule 1 when dealing with adversity, conserve your resources and use the resources that come to you!

If only one, my Mossberg 835 12 guage pump, reliable and ammo choices for basically anything you will ever need in the real world. Considering that 3 1/2" slug can kill at over 100 yards it's got enough range, and I can hunt for survival for just about any animal around. And buckshot is a great people stopper. Only problem is shells are a little bigger than bullets. For a pistol I love a 1911 but a .40 S&W makes a good argument, especially considering the extra ammo capacity. But I'd probably go with a .357 revolver, far more reliable than even the most reliable semi-autos. Give me a Springfield M1A or a Remington 700 for a rifle, reliable, accurate, powerful, and long enough range for anything you will ever really encounter. Shots over 700 meters are extremely rare.

One gun only? 1st. choice: Something in .308 Winchester/7.62x51 NATO, probably an FAL or an AR-10 Bushmaster w/24" bull barrel.
2nd. choice: A Remington 870 12 gauge pump w/extended magazine.
3rd. choice: A quality .357 Magnum revovler probably a S&W Model 27 or 28, or a Ruger Security Six stainless steel or stainless steel Colt Python.
Last choice: A good .22 Long Rifle carbine or rifle (reason I leave this as last is because it is not possible to reload .22 rimfire ammo).
Best choice: One each of each of the above plus a good hunting knife.

Interesting answers.........
The easy answer is the one gun your most like likely to find and have ammo for in most of the world. That gun is the AK-47.....
From a Jungle in El Salvador to a back alley in Liberia. I can find a Ak-47 in a few minutes some place. With 60 years worth of them around, so simple to operate a 10 yr old child soldier in Gaza can work one. It's Ammo is the same way. Even in the USA, it's semi auto versions are quite common.
It will out shoot and out range any pistol or shotgun.

If just one it have to be a .308 Saiga. My standard load out is my CZ-52 w 10 mags, my Mossberg 590 military 12ga or my Xin-Shi-Dai SAS12 with 10 5 round mags and my Bulgarian AK in 5.45x39.5 with 10 30 round mags.
I would also use Bulgarian web gear {I have 8 full sets of Bulgarian web gear w backpacks and 12 sets in all}

The legendary internet "one gun question" always good to see this one pondered. I'll go with the Mossberg 500 in .12. I can take small and large game with it. It is an effective defensive gun. Doesn't cover everything perfectly but it does adequately.

To answer your question specifically, I would probably pick an AR-15. If it has to be a gun I already have, I'd choose my Mini-14. I definitely would choose a rifle. But realistically, I would want all my guns.

I would take a highly modified Thompson sub machine gun
The round is powerful enough to take down a zombie (plan for the worst) and yet it has high firring capability.
And 45acp should at hand anywhere after the fall of society.
If i lived in europe i would make sure i had something cambered to 762x39, just because i would always need ammo.

In a typical SHTF situation id hopefully carry my 1911, sks and a rem 870.
if i could only take one it would be the sks with a few crates of ammo. I live in a rural area so if long shots were required the shotty wouldnt be much use.
