A snickerdoodle is a type of soft sugar cookie dusted with cinnamon and sugar. Usually, the snickerdoodle has a slightly crackly or crinkly top, and snickerdoodle cookies are often served at Christmas. Some cooks add more shortening and lengthen the cooking time to make a crunchier snickerdoodle, and others add ingredients including nutmeg, nuts, and dried fruit. A traditional snickerdoodle, however, remains unadorned except for cinnamon and sugar.
To make snickerdoodles, cream one cup butter or shortening with one and one half cups sugar. Mix two beaten eggs into the shortening mixture. Sift together three cups flour, one quarter teaspoon salt, one teaspoon baking soda, and two teaspoons cream of tartar, and add to the wet ingredients. Fill a shallow plate with a mixture of cinnamon and sugar, and as individual cookies are scooped out, roll one side in this mixture before putting each cookie on an oiled baking sheet. Bake at 400°F (200°C) for ten minutes or until golden.

They are a crunchy, crinkly-topped, cinnamon-spiced cookie.
For the best cookie recipe see below, and how would I know? I've searched high and low for Snickerdoodles to beat this one and have not found one yet. I have been eating these cookies for the past 20+ yrs and making them just as long. It is my mothers recipe and my grandmothers recipe. Only one came close, but not close enough.
1 c. butter, softened(can use 3/4 butter 1/4 shortening but why?)
11/2 c sugar
2 eggs
23/4 c flour
2 tsp cream of tartar
1 tsp baking soda
1/4 tsp salt
Rolling Mixture
2 Tblp sugar & 2 tsp cinnamon (I like Vietnamese)
Heat oven to 350.
Blend all dry ingredients in a bowl.
Cream butter and sugar, then add eggs and blend thoroughly.
Blend in dry ingredients.
Scoop and roll into balls the size of walnuts
(or whatever size you want, I use a disher for this because it makes a standardized cookie size and makes scooping faster with no rolling, you can find them at any kitchen shop or restaurant supply store)
Roll in the cinnamon sugar.
Place on a parchment lined sheet pan 2" apart (for walnut size)
Bake10-15 minutes. They are done when the edges are slighly firm to the touch (they should not turn brown.)
The perfect snickerdoodle will be slightly crunchy on the edge and soft in the center. Hard snickerdoodles are overdone so are brown ones.
I usually make 2-4 batches at a time because they do not last very long, and I also put a bit of cinnamon directly in the dough.

EASY TO MAKE SNICKERDOODLES
1/2 cup shortening
1/2 cup or 2 tablespoons sugar
1 egg
1/2 teaspoon vanilla
1 cup or 4 tablespoons flour
1/4 teaspoon salt
1 teaspoon baking power
4 tablespoons of cinnamon
4 tablespoons of sugar
1. Cream the shortening, sugar and egg with electric mixer until smooth.
2. Sift flour, onto a wax paper, about 1 1/2 cup.
3. Measure flour, salt, and baking powder into sifter and sift over a small bowl.
4. Add the sifted ingrediennts into the sugar and shortening and egg mixture and mix well with a wooden spoon.
5. Add vanilla and stir again.
6. Dough should be soft and easy to handle. Add a little more flour (about a tabelspoon or so) if dough sticks to your hands.
7. Preheat oven to 400F. Set out cookies sheets lined with foil 8 combine suger and cinnamon into a small bowl and set out side
9. Roll pieces of dough into the size of a small jawbreaker. Roll the bal inot the sugar cinnamon mixture. Place on a foil line cookie sheet, three across and five down. Place the rack in the middle of the oven.
10. Bake for 8-10 minutes until lightly brown. Cookies will puff up and then will flatten down and have a crispy top.
11. Let the cookies cool on the rack.

Snickerdoodles
Makes 30 cookies. Approx. 1.5 carbs per cookie
1 3/4 cups soya flour
1/2 cup almond flour
1/2 cup oat flour
1 cup (1/2 lb.) unsalted butter
1-3/4 cups Splenda
2 eggs
2 tsp cream of tartar
1 tsp cinnamon
1 tsp baking soda
1/4 tsp salt
1 tsp cinnamon
Topping Mixture:
1/4 cup Splenda
1 Tbs cinnamon
Preheat the oven to 350°F.
Sift together the flours, cream of tartar, baking soda, 1 tsp cinnamon and salt. Set aside.
With a hand held mixer or the bowl of a standing mixer, cream the butter and Splenda for 3 minutes. The color should lighten noticeably. Add the eggs one at a time and blend one minute after each is added.
Stop and scrape down the sides of the mixing bowl at any time during this process when necessary to mix thoroughly. Blend in the flour mixture in 3 parts, mixing at least 20 seconds after each addition.
For the topping: Mix together the 1/4 cup Splenda and 1 Tbs cinnamon in a small bowl.
Using a fork or a wire whisk, blend well to evenly combine the two. Roll the cookie dough into walnut size balls and drop into the topping mixture roll to coat the cookie and place at least one inch apart on cookie sheet.
Bake for 12-15 minutes.

Mix the 2 tablespoons sugar and the cinnamon. Roll balls of dough in mixture. Place 2 inches apart on ungreased baking sheets.
Bake 8 to 10 minutes, or until set but not too hard. Remove immediately from baking sheets.
