Am I breaking any laws if I do volunteer work while holidaying in the US?

I guess you are trying to make some grand point with your angle...my point will be: Volunteering is just that; volunteering. You are on vacation and offering your helping hand to volunteer. You are doing this to be a better person with yourself and your god. Even still...what does this have to do with immigration AND why would you think this is illegal?

That depends. As long as the work is incidental to your holiday, no. But if it involves regular hours, fixed duties or any kind of remuneration at all (gas money, for example) then it is not allowed.
