you're doin it wrong
if you want fake maple syrup, you could buy it at the store, or use corn syrup instead, and some maple flavorings.
If you want real maple syrup, you poke a hole in a tree, catch what drips out, taste it to make sure its good, then boil it down 40 to one. I tried it once. It was FUN. Careful whose trees you use.

Stir on medium high until it boils. Add lemon juice, vanilla and maple flavoring. Stir. Fill hot sterilized bottles to within 1/4 inch of top. Seal. Makes 3-1/2 pints.

You need to add some kind of corn syrup. You can't just boil sugar and add maple flavoring. You are pretty much just making candy there. I hope this helps. It is probably just easier to buy the syrup rather than make it.

basically, you can't make good tasting syrup like that. you need to try your hand at making some real stuff. i'm building a sugar shack at my farm to do this (about 40 trees) there is a hugely informative site that can tell you all about how to make it, and various maple products. (oh... which i see it has been shut down in the last week... crap. well, this totaly messes things up lol) try this one

anyways, real maple syrup is fun to make and (i think) slightly better than chocolate. just watch out you don't get addicted to it... it's that good. bottom line, don't try to make fake stuff, just go buy some, or do it the real way

I have done this by adding sugar to water until the sugar no longer disolves into the water (a saturated solution) and then simmering until it became syrupy. It came out perfect. I did it to show my kids how much sugar was in the syrup. When it cools it may get a little "gritty", but heating it will make it syrupy again.

1cup of water, 2 cups of sugar, and 1 tsp. maple flavoring. Boil in a saucepan until syrup consistancy. Do not stir with the same spoon twice or it will turn back into sugar
