The process is called "homogenization." It means that the dairies and milk processors use a method to make the milk the same consistency throughout, and it will not separate. Also, most dairies will skim the cream off to sell as "cream." (Go figure!) at a higher price. Farmers actually get different rates for their milk based on what percentage of the cows' milk is cream, milk solids, and water.

Dairy cream clums together and floats to the top naturally. The store bought dairy products normally are homogenized. In the process, the cream in the milk gets broken down into very tiny droplets so that it is suspended amongst the liquid.

It's like making creamy Italian salad dressing. The oil is the same but it just doesn't floats to the top.

Milk from the supermarket is 'homogenised' which just means it's been mixed so the milk and cream don't separate out. You could also get homogenised milk from your milkman, or the normal stuff that separates out.

You can also get UHT milk from the milkman, but there isn't much call for that because it's shite.

Because the milkmans is fresher. But they haven't delivered it like that since I was a teenager in the sixties, Who's your milkman, cause I want some!!

im convinced its fresher from the milkman!!! i remember milkman milk so much better out of a glass bottle!!!

Because the milks fresher and has been bumped around abit. Unlike some milk form shops which mix drugs and faq ends in milk along with spit and cows pee. Not nice..

all full milk has cream. it rises to the top when it has time. maybe it is shaken a lot in supermarkets
