I'm planning to buy a mandoline but am shocked by the prices I've seen so far. Bourdain in his book says that one doesn't not need spend that much for a mandoline... which I agree. But my question is : what do we need to look for when we are buying a mandoline? A famous book-selling website which is now selling kitchenware, sells a range for just about £30. I wonder how efficient that is. Has any of you got any recommendations/suggestions about it?

I agree with both answers ! I also have a few professional knives but I'd like to be able to produce a nice julienne of veg. I also thought about a japanese mandoline, but here in London I only saw it in one shop and was still fairly costly...

As with any other kitchen tool you don't need to spend tons of bucks - base your buying decision on how often you will use the item. I would suggest that you donot purchase one on the web unless you have seen and touched one. Some of the mandolines out there are just really a waste of time and money - if you are going to use one regularly put out the bucks for a good one. Mine has three different inserts for different widths of cut - for juliane, baton and stick sizes.

The price range will determine the life span of the mandoline more than the efficiency. Unless you are planning on using it on a daily base, most functions of the mandoline can be performed with a simple knife and a wavy cutter which will cost you less but take more skill.

My personal experience with any tools, especially kitchen ware, is that if you are going to get it, do it right. Invest in the quality ones that lasts and will make the job easy. A simple chef knife can range from $5 to $50, but I tell you, you get what you paid for. in the end

I would go to an asian market and buy one... they usually have an assortment that (obviously) vary in prices... i bought mine for $22 and it works wonderfully... the european brands are often 2-3 times as expensive... the model i have can be seen on the jbprince.com website although i believe they charge more for it than what i paid.... the nice thing is is that they are usually super easy to clean and if you use it tons and tons and wear it out then it is not really expensive to replace... but they are hard to wear out too... ok... have fun and watch your fingers
