To pee is a natural body process in which it disposes of waste. Key word there is natural! When you have to go you should go! Otherwise your body will tell you otherwise... which is why you start crossing your legs and doing the funky chicken...lol. However, on a seriouse note if you are having trouble peeing or the lack there of you could be having Anuria... the absense of urine or should I say lack there of... and yes you should be drinking plenty of water. Your urine should almost be clear when you urinate... if its yellow you NEED to drink more water. Especially if your doing a lot of walking. Even though it is cold does not mean you are not sweating! So drink plenty of good old H20... back to Anuria... here are possible causes:

It's okay. It won't kill you or anything.
The trouble is that you could develop the old "nurses bladder" situation where your bladder is used to holding large quantities of urine and then becomes distended and floppy - you wind up (after many many years of this) with a neurogenic bladder, a large residual of urine after you go to the toilet. This becomes stagnant and you are prone to urine infections.
The thing to do is to use your body as it is supposed to be used. Drink plenty of water - two to three litres per day (8 glasses of water is a good guide) and then pass your urine when you need to - it should not look dark and brown, but should look clear like water.
Avoid dehydrating drinks such as - alcohol, caffeine, drinks that are excessively sugary (carbonated beverages)

When you gotta go...you gotta go. You know what the answer is. You need to pee. do you best to relieve yourself if you need to.
ive held it too in my classes at school and same story as you mentioned...you should go cause in the long run you can develop bladder problems.

The urinary bladder will hold more urine than you produce in eight hours. Thus we are able to go through the night without getting up to urinate. You need to train yourself to last longer periods without urinating.

Personally, I don't think it's anything to be worried about. However, when nature calls, you will eventually have to obey, even if it means watering a tree in someone's back yard.
Shame on your current supervisor for not allowing you break time.
