Something like your initials and the date that you are to be married... its not like a romantic phrase or anything but its apart of you that you are giving to him and that way he has no reason to forget the anniversary. I was lucky with my ex fiancee (broke up for reasons unknown to me) that our initials linked up "ALH" were mine and "HJS" were his so we had planned to have "ALHJS" and the date engraved in them...
If you perhaps get your new initials like your initials with his last name, if you are taking it, plus the date you got married.
Inscriptions can be a waste of time however as the purpose of the wedding ring is to stay on, and no male will ever take his wedding ring off and say to the boys "hey look what my wife wrote in my ring"
simplicity is the key... something like "i love you" or "forver yours" and then the initials and the date.
Its not originality you are after, and if it is, try putting in another language, or coining a phrase you use with him often that has special meaning between you and him. Like me and my current boyfriend call each other "king boss" and "wifey" so that maybe something to consider if we get married.
So if you have a pet name or something that you two know about and no one eles does those are the kinda original things you can think of. make it something that means something to him

My wife put in mine; 513 143 814 which is her birth day (513) our special "code" for I love you (143) and my birthday (814). It was original and loving. Pick something that means somthing to you...not something that sounds nice. Make it a part of you

My husband wrote on mine his nickname for me and then the special code for I love you. It means a lot and I'm the only one that understands it.
Do something like that, as much as these guys here tell you they aren't into it, a REAL man enjoys knowing he is loved and thought of for even the smallest of gestures.
