November 1st is my 3rd anniversary with my fiance. I wanna make a cake to surprise him. Do you know sponge cake that coated with whipping cream, then fresh fruits topping on top, glazed with corn syrup?! how do you make that?! i saw the pic on my tb, but i cant find the recipe....

Sponge Cake
5 egg yolks
1 cup sugar
1 teaspoon vanilla extract
5 egg whites
1/2 cup flour

Beat egg yolks until lemon colored; add sugar slowly a tablespoon at a time.
Add vanilla and gradually, the flour.
Fold in egg whites which have been beaten until stiff.
Bake in preheated oven at 350 degrees for 35 minutes in greased pan.
Let cool 10 minutes; remove from pan.

Apricot Glaze

1 cup apricot preserves or jam
2 tablespoons cold water or liqueur


What to Do
1. Stir the preserves in a saucepan over low heat until it becomes slightly more liquid. Strain the mixture and return to the heat.

2. Add the water or liqueur and boil gently for 2-3 minutes.

Yield: About 1 cup

I've seen this glaze made with like apricot brandy Hope this works. I know it's not exactly what you specified, but this might work.

I made this with my mom's pouncake recipe. Once it cooled, I frosted with whipped cream and decorated with fresh berries. It was the yummiest, we couldn't stop eating it!
So I thought I'd share it for an aniversary! Have a great one!

Pound Cake -
3 sticks margarine
3 c sugar
5 eggs
3 1/2 c flour
1/4 tsp salt
1 c milk
2 TBS vanilla

Preheat oven to 275. Cream together butter and sugar. Add eggs 1 at a time. In another bowl mix flour and salt. Mix flour mixture alternately with milk. Add vanilla. Pour in greased and floured pan. Bake 1 1/2 - 1 3/4 hours. Let cool, remove from pan.

If you don't want to frost all at once, you can top a slice with the whipped cream and fruit, maybe a sprig of mint would be a nice garnish...oh man am I hungry now.

Use your browser, I typed in "sponge cake, whipped cream, fruit" and got a bunch of sites. Joan Urban's sponge cake, #7, is close to what you want.
I tried glazed fruit first, got nowhere with that one.
I will update you as my search continues.
I went back to browser and typed in "glazed fruit'. Got several, but Jill's berry fruit pie fits what you want, it uses corn starch. There is another that uses arrowroot.

Try a trifle, just google in trifle and you will get so many recipes. I think you can look at one of their pictures to see if it was what you want.
