Banana Split Ice Cream Pie
1 1/4 cups chocolate wafer crumbs (about 25 cookies; such as Nabisco's Famous Chocolate Wafers)
2 tablespoons butter -- melted
3/4 cup chocolate sundae syrup -- divided
4 cups sliced banana (about 5 bananas)
1 (1.75-quart) container vanilla ice cream -- softened
1 (18-ounce) jar strawberry sundae topping
1 cup coarsely chopped pineapple
5 tablespoons chopped dry-roasted peanuts
16 maraschino cherries with stems (optional)
Combine crumbs and butter, stirring with a fork until moist. Press crumb mixture into bottom and 1/2 inch up sides of a 10-inch springform pan. Spread 1/2 cup chocolate syrup evenly over crust; top with banana. Spread the ice cream evenly over banana. Cover and freeze 3 hours or until firm.
Spread the strawberry sundae topping evenly over ice cream. Cover and freeze 1 hour. Let stand at room temperature 5 minutes. Cut into 16 wedges. Drizzle each serving with about 3/4 teaspoon chocolate sundae syrup, and top each with 1 tablespoon chopped pineapple, about 1 teaspoon chopped peanuts, and 1 maraschino cherry, if desired. Serve immediately.

3 tablespoons all-purpose flour
2 teaspoons vanilla extract
4 large eggs
Toppings:
1/3 cup canned crushed pineapple in juice, drained
1/3 cup strawberry sundae syrup
1/3 cup chocolate syrup
1/4 cup chopped pecans, toasted
16 maraschino cherries, drained
Preheat oven to 325°.
To prepare crust, combine first 3 ingredients in a bowl; toss with a fork until moist. Press into bottom of a 9-inch springform pan coated with cooking spray.
To prepare filling, beat cheeses and sour cream at high speed of a mixer until smooth. Add 1 1/2 cups sugar, banana, flour, and vanilla; beat well.
Add eggs, 1 at a time; beat well after each addition. Pour cheese mixture into prepared pan; bake at 325° for 1 hour and 10 minutes or until almost set. Cheesecake is done when the center barely moves when pan is touched. Remove cheesecake from oven; run a knife around outside edge. Cool cheesecake to room temperature. Cover and chill for at least 8 hours. Top each serving with 1 teaspoon pineapple, 1 teaspoon strawberry syrup, 1 teaspoon chocolate syrup, 3/4 teaspoon pecans, and 1 cherry.

Banana and Yogurt Crepes
1 3/4 cups low-fat (1 percent) milk
3/4 cup flour
1 egg
1 egg white
2 tablespoons honey or maple syrup, divided
1 container (8 ounces)low-fat banana or vanilla yogurt
1 banana, diced
1/2 teaspoon vanilla extract
Fresh mint sprigs, optional
Powdered sugar, optional
Whisk together milk, flour, egg, egg whites and 1 tablespoon of honey in a medium bowl. Allow batter to rest five minutes at room temperature.
Heat a 10-inch non-stick skillet over medium heat and spray with cooking spray. Pour 1/4 cup batter into skillet; quickly tilt and swirl batter to coat bottom of skillet. When crepe is lightly browned at edges, use a thin spatula to loosen and turn over. Cook turned crepe about 20 seconds or until lightly browned; slide onto plate to cool. Continue making crepes with remaining batter. To prevent sticking, place a piece of wax paper between each crepe.
Puree yogurt, vanilla and remaining honey in a blender or food processor until smooth. Add diced banana. Spread each crepe with about 2 1/2 tablespoons of the yogurt mixture. Roll crepes into cylinders. Place two crepes on each serving plate and garnish with mint sprigs, if desired. Makes four servings.

This banana nut bread is the best, from Louisiana.
INGREDIENTS:
1 cup butter
2 cups sugar
2 tsp.vanilla
2 tsp. lemon juice
4 eggs
2 cups bananas(mashed)
1 tsp. salt
3 1/2 cups flour
2 tsp. baking soda
2 tsp. baking powder
1 cup sour cream
1 cup of chopped nuts
PREPARATION:
Cream the butter with the sugar, add extract and eggs, one at a time, then add bananas. Sift all dry ingredients, add to wet ingredients, alternately with sour cream, fold in nuts. Bake in two greased (or spray with nonstick coating) loaf pans at 350 degrees for 50-55 minutes.
Makes two loaves.
Candy's Note:
This is an excellent recipe. I have been making it for a long time. When I have bananas that look kind of over-ripe, and I don't have time to bake my breads right away, I take the bananas and put in the freezer, skin and all. When I am ready to bake, I thaw bananas, and presto, they are nice and soft, so there is very little mashing to be done.

BANANAS FOSTER
4 tablespoons butter (1/2 stick)
1 cup dark brown sugar
2 bananas
2 oz. banana liqueur
4 oz. dark rum
Ground cinnamon
Vanilla ice cream (optional)
Melt the butter and add the brown sugar to form a creamy paste. Let this mixture caramelize over the heat for about 5 minutes. Stir in the banana liqueur. Heat until the liquor is warmed, about three minutes. Add the bananas, add the rum (preferably warmed), then ignite with a flourish and cook for about 1 - 2 minutes.Let the flames go out. Serve over ice cream, sprinkle with cinnamon.
Banana and Orange Salad
4 oranges
3 bananas
juice of 1/2 a lemon
juice of 2 oranges
1/2 cup of sugar
white of 1 egg
1/2 cup of pineapple juice
Slice the oranges and bananas and mix in a bowl. In a saucepan, combine the orange and lemon juices, sugar and egg white, bring to the boiling point, stirring often and simmer for 5 minutes. Strain juice through a piece of muslin or several layers of cheesecloth. Pour over banana and orange slices.Add the pineapple juice. Place in refrigerator to chill for at least 4 hours.
Icy Banana Milkshake
2 bananas, peeled and sliced
6 ice cubes
5 cups milk
1/2 cup sugar
In a blender, combine the bananas, ice cubes, milk and sugar. Cover, and blend for 2 minutes, or until ice is finely crushed.

Take and toss 3-4 bananas in a ziplock bag (skin removed) and put them in the freezer. The bananas may get a little darker, but works great for keeping them for other recipes. Use recipe rewards (website) and Betty crocker cookbook (also on line) to pull a lot of my recipes from.

BANANA SPLIT CAKE
1 banana cake mix
1 chocolate cake mix
bananas, sliced
strawberries, sliced
crushed pineapple, drained
marichino cherries, drained
chocolate syrup
whipped cream, approx 5 cups, one cup for each layer and topping
This recipe makes a large 4 layerd cake. Great for parties.
Follow cake mixes and bake as directed for a 13 by 9 pan. Cool and cut each cake into layered halves.
Place chocolate layer and cover with whipped cream. Sprinkle with bananas, strawberries, pineapple and cherries. Drizzle with syrup.
Repeat with remaining layers.
Top with remainder of whipped cream, decorate with fruit and drizzle with syrup. Add nuts and sprinkles if you like.

Everyone loves banana and chocolate...
Banana Pops -
6 medium bananas
12 wooden pop sticks
1 pkg. (8 squares) BAKER'S Semi-Sweet Baking Chocolate
1/3 cup butter or margarine
3 Tbsp. multi-colored sprinkles
CUT bananas in half crosswise. Insert pop stick into cut end of each banana half. Place on tray; cover. Freeze 3 hours or until firm.
MICROWAVE chocolate and butter in small microwavable bowl on HIGH 1-1/2 to 2 minutes or until chocolate is almost melted, stirring after 1 minute. Stir until chocolate is completely melted. Pour into tall glass.
DIP frozen bananas into chocolate mixture, turning to evenly coat. Immediately roll in sprinkles. Place on wax paper-covered tray. Serve immediately. Cover leftover pops and store in freezer.
This one is different but if you like exotic foods, you'll dig it.
Carribean Bananas-
2 medium rip bananas
1 TBS margarine
1/2 tsp curry powder
1/8 tsp ground ginger
1/8 tsp chili powder
Peel bananas. Cut in half lengthwise and set aside. Melt margarine in pan and add curry powder, ginger, and chili powder. heat for 30 sec. Add bananas and cook 1 min. Turn and cook additional 1 min.

1/2 tsp baking powder

Cream oil and sugar. Mash bananas and add to sugar. Add eggs and beat well. Add dry ingredients. Stir in nuts. Bake in greased pan for 50-60 minutes.

You can freeze them in the skin, when you thaw them they are just good for baking, like banana bread. I recommend this in case you want to save them for later.
