"Cordon Bleu" Manicotti
1 pkg (12) string cheese snacks
12 slices each deli sliced ham and chicken breast
12 manicotti shells
1 jar pasta sauce
3/4 cup water
shredded parmesan cheese
Roll ham and chicken slices around each string cheese snack and slide into mannicotti shells. Mix water with pasta sauce. Pour a little sauce into bottom of baking dish. Place Manicotti in baking dish and pour remaining sauce over shells. Bake covered with aluminum foil (or if baking with covered dish, cover with lid) bake at 350 for 50 minutes or until pasta is tender. Top with parmesan and serve.
HOT DOG AND HAMBURGER PIE
1 pound lean ground beef
4 hot dogs , cut into 1/4-inch slices
1 (15 ounce) can vegetarian baked beans
1/2 cup ketchup
2 tablespoons brown sugar
2 tablespoons prepared yellow mustard
2 ounces Cheddar cheese, cubed
1 (1.25 ounce) package taco seasoning mix
4 slices processed American cheese
1 (9 inch) deep dish pie shell
Preheat oven to 400 degrees F (200 degrees C). Bake empty pie shell for 10 minutes. In a large skillet over medium heat, cook ground beef until browned, stirring occasionally to crumble; drain fat. Stir in hot dogs, beans, ketchup, mustard, taco seasoning, and cheese cubes. Cook for 2 to 3 minutes. Spread beef mixture into baked pie shell. Cut American cheese slices into strips, and make a lattice on top of pie. Bake for 5 to 10 minute, or until cheese is slightly melted.
CHICKEN CORDON BLEU BAKE
1 pound small red potatoes, cut into 1-inch chunks
1 tablespoon water
1 (10 3/4-ounce) can condensed less-sodium, less-fat cream of chicken soup
1/2 cup skim milk
1 pound chicken breast tenders or strips
12 ounces fresh broccoli florets
4 ounces cooked ham, cut into 1/2-inch chunks
1 cup reduced-fat shredded Swiss cheese
1/4 cup chopped fresh parsley
1 clove minced garlic
Heat oven to 350 degrees. Combine potatoes and water in a large bowl; microwave on high for 3 or 4 minutes or until potatoes are tender; drain. In a small bowl, mix soup and milk until smooth. Add soup mixture, chicken and remaining ingredients to potatoes; mix well. Transfer mixture to a 9-by-13-inch baking dish coated with cooking spray. Bake, uncovered, 50 to 55 minutes or until chicken is no longer pink.
EASY BEEF ENCHILADAS
1 Lb. ground beef
1 (19-oz.) or 2 (10-oz.) cans Old El Paso Enchilada Sauce
6 oz. (1 1/2 cups) shredded cheese
1 (12-ct.) pkg. Ole El Paso Flour Tortillas for Soft Tacos &
Fajitas
Heat oven to 375*F. Brown ground beef over medium-high heat
until thoroughly cooked; drain. Stir in 3/4 cup Enchilada sauce
and 1 cup cheese. Spoon enchilada filling onto tortillas;
roll-up and place seam-side down in lightly greased 13 x 9 x
2-inch baking dish. Pour remaining enchilada sauce over top;
sprinkle with remaining 1/2 cup cheese. Bake at 375*F for 15 to
20 minutes. Makes 12 Enchiladas
Beef Stroganoff Casserole
1lb. hamburger (or ground turkey works as well)
1 pkg. egg noodles or other noodle
1 can sliced mushrooms, drained
1/2 onion, minced
1/2 tsp. minced garlic (about 1 clove)
1 cube beef boullion
1/3 cup water
1 can cream of mushroom soup
1 1/2 tsp. Worcestershire sauce
1 cup sour cream
1 cup shredded swiss cheese
In boiling water, cook noodles according to directions. Brown hamburger, drain fat, add the boullion and water, adding onion and garlic to soften. Add soup to meat mixture, mix well as it warms and thins. Add mushrooms, cooked noodles, worcestershire sauce and sour cream. Mix well and pour into casserole dish. Top with swiss cheese and bake 30 minutes or until cheese is bubbly.
TUNA NOODLE CASSEROLE
1 1lb. bag egg noodles
2 tbsp. butter
2 cans water packed tuna, do not drain
1 can cream of mushroom or cream of celery soup
1/2 cup sour cream
Boil noodles according to directions, drain. Add butter, tuna, soup and sour cream, mix well. Store leftovers in freezer.

Everyone loves this, I always get asked for the recipe and it is pretty easy. serve this with a fairly plain buttery cracker or a ritz. This is a half recipe. Cheese ball with maple syrup. 1/2 container of Imperial sharp cheese (in the red tub) 1/2 large brick of cream cheese a rounded teaspoon of Miracle Whip, and about 1/2 bag of pecan pieces- toasted in oven a few minutes on a cookie sheet. Easy to double as you can see, depending on crowd size. Soften the first three slightly in the microwave just until you can combine them smoothly. Form into a mold on the plate and then let harden in fridge. I started the night before - toasted the pecans, put the cheese mold in the fridge to harden. Took it out about an hour beforehand to put the toasted nuts on (just press pieces into top and sides) and let it soften a bit, then poured the syrup on just before serving. I use the "15% real" version, either Aunt Jemima or PC, whichever is cheapest.

My family really enjoys when I make different versions of shepards pie.
Brown 1lb. ground beef, turkey, or lamb with garlic or whatever you like. Drain and mix with pre-cooked veggies and tomato sauce or even some dark beer. Put in the bottom of 2 quart casserole dish, cover with a layer of mashed potatoes, then top with cheese. Bake at 350 ubtill bubbly.
This can be tweeked any way you like and it is quick, easy, and hearty for the cold months!

take chicken breasts and flatten them with a meat mallet, great for getting over a hard day.
put a slice of pepper jack (or really any cheese you like) in the middle and roll up. Hold it together with a toothpick or two and dip in egg then Italian breadcrumbs and pan fry. Remove the toothpicks and serve.
Basically you can put a lot of things in the chicken instead of the cheese. I have done Mexicali corn and sliced bell peppers inside, stuffing mix inside, asparagus and Swiss cheese, pace picante sauce and corn, broccoli and Velveeta.
The thing I like about this recipe is that it looks as good as it tastes and people think you spent a lot of time in the kitchen.

How about a...
5 Minute Chicken BLT Salad -
8 c torn romaine lettuce
3 c sliced chicken breast (@3/4 lb)cooked
2 c cherry tomatoes, halved
1/2 c sliced red onion
1 c sharp Cheddar, crumbled, divided
1/4 c Ranch with Bacon dressing
2 slices bacon, crumbled
Toss lettuce, chicken, tomatoes, onion and 1/2 c of the cheese in a large bowl. Add dressing; mix lightly. Top with remaining 1/2 cup cheese and bacon.

Rosemary Lime Chicken-
4 boneless skinless chicken breast halves
2 TBS canola oil
1/2 c chicken broth
1/4 c lime juice
2 tsp rosemary, crushed
s&p
Flatten chicken and brown in oil. Add remaining ingredients and cook, uncovered 5-7 min or until juices run clear

Baked Salmon -
1 Salmon steak, can cut into cubes, portions, or leave whole
Spicy mustard
parsley flakes
bread crumbs
Spray bottom of pan. Place steak in pan, skin side down. Spread mustard generously on salmon. (top and sides) sprinkle w/ s&p, parsley to taste. Cover in bread crumbs. Bake at 400* for @10 min or until done.
