wash greens thoroughly in cold water. remove large center vein from leaves. dice one med. onion and bacon and saute' in the pan you're going to cook the greens in. add greens cover with water,bring to a boil. reduce heat and simmer until greens are tender. season to taste a, add a tbsp of butter.simmer til flavor runs through. for added flavor add collard greens and spinach.

If you mean mustard greens and turnip greens or even mustard greens with turnips: Start by slow cooking either a ham hock or smoked turkey leg (til it falls off the bone). You season the meat well before cooking and once ready. add your greens and turnips. You must clean well (rinse several times with water) and cut up your greens first. It will take longer for the turnip to soften so it's usually cut into pieces and added (let to cook with the meat) before the greens. once you get everything in the pot cook on low until greens are tender. Mustard greens won't take as long to cook as collards ( 1 hour) .

If you care for fat...add chunk of pork meat on bone in a big pot. Hamhock or back or bacon...If you dont care for it, add turkey bacon..

In the meantime, I mince some garlic or use minced garlic from the jar. Put that in the pot. Chop onions...add to the pot. Add a 1/2 cup to 1 cup of water (depends on how much greens). Add greens..turnips. Add salt and pepper. Cover.

Let them cook down to your preference. I like mine to have a little crunch or just not turn out too soft. After I put them on my plate, I add a bit of vinegar to give them a nice kick.

slowly wilt them in olive oil, and butter. S&P, Then sprinkle white vineagar on them. YUMMMMM-O!!
