I have a package of dried shiitake mushrooms.... the expiration date on the package was two years ago... but all those mushrooms look great still. Wonder if they're still good? I want to make them into some stew or soup or something.

Most dried shiitakes can last on the shelf, in an airtight container, for up to a year. (They can last even longer if frozen.) If they can last that long before "expiring," then the flavor shouldn't diminish at a fast rate over time. Your two-year-old mushrooms won't taste near as flavorful as fresher shiitakes, but they should still be able to liven up a stew or two before they bite the dust. :o)

I'm Asian and use dried shiitake mushrooms -- I haven't had mine go "bad" per se -- the flavor may be diminished, however. I normally store mine in the freezer. (Mine don't have preservatives so I'm not sure what the prior post is referring to.)

If you make a stir fry, you can re-hydrate the mushrooms and add it to that. You can also use it in mushroom gravy. We also use them in our stew -- they add a nice deepness to the broth (and in which case you don't need to re-hydrate them because they'll soak up the broth).

To re-hydrate, just take some very hot water and pour it over the mushrooms. Because they're dried they tend to float. I use a bowl or dish that is smaller than the container that holds the mushrooms and hot water, and place it over the mushrooms. Weight it down by either placing something else heavier and/or if using a bowl then add some water to it. The point is to keep the mushrooms submerged.

Also, you should be warned that the dried shiitake mushrooms have a stronger flavor than fresh ones. They don't taste like portabella. So add just a little and add more according to your taste preference.

Yes. After such a long time mold would grow on them or bugs would laid eggs in them unless they have been kept air tight in a fridge.

Yes. Keep them in freezer. And use them before 6 months just to be safe. My opinion.

I would suggest not using them, as the preservatives do go potent after a while.
