You can certainly eat the whole seed.
To make them taste wonderful, toss in a tablespoon of oil first and sprinkle in seasoned salt. Yummy!

Definitely leave the shell on. When roasted, the shell turns golden and crunchy. It also provides additional minerals that are very good for you.

no, you have to remove the shell first, then eat the seeds becasue the shell is quite hard and can't easily masticated .

Roast the entire shell...
If you roast them nice and brown the
seed is crispy and delicious
