I always make my own sauce, that is what makes mine creamy and extra cheesy. What I do is I take 4 TBS of butter/margerine and I melt it. Then I add 4 TBS of flour, 1 TBS at a time and stir each one to make sure that it is smooth and thick, a rue, like for gravey. Then I add 4 cups of milk, a little at a time and stir each one til smooth. After that is smooth and well mixed, I add in diced American Cheese, Kraft Deluxe, is what I use. I add a whole 2 pound box. I stir constintley untilthe cheese is melted, then I pour over 1 pound of cooked macaroni or shells. I use wheels and bows too. It is a lot of sauce, but it makes it extra cheesy. Add desired seasonings and serve.

Make a cheese sauce.
Ingredients
2 oz butter, clarified
2 oz flour
1 qt milk, whole
1/2 tsp salt
2-1/2 cups cheddar cheese, sharp, shredded
1/4 tsp white pepper, ground
Method
Heat butter in a stainless steel sauce pan. Stir in flour to make roux. Cook over low heat for 5-8 minutes.
In another stainless steel sauce pan heat milk to simmer. Add the simmering milk to the pan with the roux and mix well to incorporate. Bring the mixture to a simmer, while stirring continuously. Reduce heat to very low. Add half of the cheese, stir until blended. Add remaining cheese and stir until it is blended. Hold for service by placing in a double-boiler above simmering water.
Yields: 1-1/4 qts.

heat a saucepan, add unsalted butter, add flour (you are making a rue, at this point). cook this for one minute, then add milk, colby cheese, cheddar cheese and cook over the heat until it thickens. Pour over cooked macaroni (or add cooked macaroni to pot and stir). Add bread crumbs to garnish, if you like.
(Joy of Cooking has an excellent recipe with the exact measurements, but this was just giving you an idea of what you do to make stovetop mac and cheese homemade).
Good luck!!

I know that Rachael Ray has a stovetop recipe for mac & cheese, no oven. I would go to www.foodnetwork.com and in the recipe search type macaroni cheese. If you click to go to her show you will only see recipes for shows currently in cycle. But they have an extensive recipe archive and I bet they will have it.
