I would say your very right in thinking that, when I was a chef, we would change things evrey so often, instead of lemon juice, we would subsitute, blood orange or plain orange juice, the one thing about hollandaise is the temparture, keep it warm.
When we used it on white asparagus we would brown the butter for a nuttier taste, and I like to make a reduction of shallots, white wine, peppercorns, parsley stem and a dash of tarragon. In the restaurant I worked I would fill a wine bottle with this mixture to have on hand, I made hollandaise everyday, in one place I used to make it for one of the other kitchens and had to make enough for 100, I used to melt 15lbs of butter.

I like it cause asparagus are kind of green and blend in taste and the hollandaise richness complements and finishes that.

Just does. But I can't find asparagus anywhere this year. Probably due to the spinach thing I would guess. Miss them both.
