Here's what I did when on a strict budget raising kids.

Buy a large pot roast. Cook as you normally would. The trick is using the leftovers. How? Shred some of the roast, reserve some gravy. take flour tortillas, a can of re fried beans, some grated cheddar cheese and a small spoon of gravy. Add a little cumin for flavor. roll up and you have burritos. Or you can but the beef in corn tortillas with cheese and buy a can of enchilada sauce, roll 'em up and sprinkle with more cheese and bake now you have enchiladas.

You can also take the leftover meat and add a can of beef broth to it and a bag of frozen soup veggies if you thicken it you have stew, if you don't you have veggie beef soup.

So with this in mind use your imagination and start buying those big cuts of meat.

You can start with a ham and have it sliced one night, or two, make a few sandwiches, then dice off the rest and make scalloped potatoes with ham, mac & cheese with ham, get a bag of split peas and make soup with ham. And don't forget the bone. Ham & bean soup use pintos or white beans, it's all good.

And don't bore your family with leftovers remember you can freese all this stuff and use it when you need it.

I just stumbled on an easy dish. Chili! But it comes out really good. I get the Westbrae Natural brand "Vegetarian Organic Chili Beans" and use the recipe on the can. (You may not find that brand at Wal-Mart, I found it at Whole Foods.) It's very quick and easy and makes a lot especially if you double it up. Super cheap too! Sometimes I'll do the rice or use corn chips or make a cornbread mix to go with it. And some zucchini or other veggie to go on the side. You can add ground meat if you wish.

We were pretty poor when my kids were little (they are now MEN!), but we always had plenty of good food.
Hamburgers, spaghetti w/meat sauce, chili, meatloaf, tacos, porcupine meatballs(mix rice into the burger, make into balls, and bake in tomato soup), sloppy joes.
All these can be made with ground turkey--cheaper, healthier.
All types of chicken-fajitas, bbq sandwiches, baked, bbq wings, baked for pasta, etc.
Buy a pig or a half if you can...ditto a steer...

When I was growing up we had a budget and my father would cook things off the back of the Bisquick box. Hamburger surprise and such, it was good.
The thing that wasn't good was chicken wings and soy sauce, to this day I hate soy sauce.

check out woman's day magazine they always have menus planned out for the whole month. you might not exactly like what they have planned out but maybe it will give you some ideas. i don't know it the menus are online but you can check it out on womansday.com also look at the food network sight they have recipes and they are in catagories like easy and difficult foodnetwork.com hoped this helped!!

hot dogs, hamburgers, hamburger, tuna, or chicken helper, fish sticks, corn dogs, Frito chili pie, pot pies, spaghetti, any of the home style backs, tacos, taco salad... all of these are cheap, easy, and take little time.
