Italian bread crumbs

Cheese, cut into 3x1/2" sticks
Egg & milk mixture (like you would make for French toast)
Italian bread crumbs

Make egg and milk mixture "eggy". Dip cheese sticks into egg mixture, then in flour. Dip in egg mixture again. Now dip in Italian Bread Crumbs. Set cheese sticks on plate line with waxed paper. Put in freezer for at least 15 minutes. Deep fry in hot oil until breading is brown. Serve plain or with pizza sauce for dipping.
Make sure you put waxed paper between your layers of cheese sticks before putting in freezer

This recipe goes with Ham-and-Greens Pot Pie with Cornbread Crust

Cornbread Crust Batter

Prepare Cornbread Crust Batter, adding 1 cup (4 ounces) shredded Cheddar cheese and 1 (7-ounce) jar drained, diced pimiento.

Heat oven to 450°, and place cast-iron miniature corn stick pans in oven; heat 5 minutes or until hot. Remove pans from oven, and coat with vegetable cooking spray. Spoon batter into hot pans.

Bake at 450° for 8 minutes or until golden brown. Remove from pans immediately.

Yield: Makes 5 dozen

Use regular bread crumbs and add your own seasonings to it, (a little parmesan cheese, oregano, basil, garlic powder...whatever)that way you can put as much or as little as you want!
That's how I do it anyways!
