our kids love cheese and we'd love to know how to make a cheese sauce for pasta, for dipping stuff, or whatever. we have tons of cheese and seek a recipe from scratch. we don't want to buy straight cheese sauce.

2 tablespoons butter
2 tablespoons all-purpose flour
1 teaspoon salt
1 cup milk
1 cup shredded Cheddar cheese
1 teaspoon prepared mustard
salt and pepper to taste
DIRECTIONS
In a medium-size saucepan, melt butter or margarine. Mix in flour and 1 teaspoon of salt. Stir continually until the mixture is simmering.
Slowly pour milk into the mixture. Continue stirring over a medium heat until the mixture has thickened. Stir in cheese and mustard. Continue stirring until all of the cheese is melted and the dip is smooth. Serve warm after adding salt and pepper to taste.

Dipping cheese sauce Ingredients 4 tablespoons butter, melted 1 large onion, minced 4 tablespoons flour 2 cups milk 1 lb cheddar cheese Method Melt butter in a skillet; add onion and sauté until caramelized. Add flour and cook for 2-3 minutes on medium heat. Add milk and cheese and stir frequently until melted, about 15 minutes.

For Pretzels:

1 cup grated cheese
1 tb flour (thickener)
1tb milk

Take the grated cheeses and put into a bowl. Stir in milk and flour (add more as needed). Then heat in the microwave until cheese has melted or until hot. You should try doing it in minimal parts so as not to over heat.
This is a family recipe so it is tasty.

NACHO CHEESE SAUCE

1/4 c. chopped green pepper
1/4 c. chopped red pepper
4 to 5 cloves garlic, minced
2 scallions, minced
1 tbsp. olive oil
2 tbsp. butter
2 tbsp. flour
1 1/2 cups milk
1 c. cheddar cheese, shredded
1/4 teaspoon Tabasco sauce
2 tbsp. minced jalapeno peppers
1/4 teaspoon salt
Pinch cayenne pepper
1/4 teaspoon paprika
nacho corn chips

Mix together peppers, olive oil, garlic and butter in a saucepan.
Sprinkle in flour, pour in milk and stir until mixture simmers -- do not allow to boil. When mixture begins to thicken, stir in the cheese and remaining ingredients, Simmer on low heat an additional five minutes or until cheese is fully melted.

Take the cheese and put it in a double boiler with a tiny bit of butter and heavy cream. If you do not have a double boiler put a little water in one pot then place the second smaller pot with the cheese in it inside it. Make sure the cheese is finely shredded.

"Cheese Sauce"

2 tbsp. butter or margarine

1 1/2 cups milk

1) In heavy, 1-quart saucepan over medium heat, melt butter. Stir in flour, salt, mustard and pepper until smooth.
2) Gradually stir in milk; cook until mixture boils, stirring constantly. Cook 2 minutes more. Add cheese; stir until melted. Yields 2 cups.


"Wisconsin Cheese Fondue" - 6 servings

4 cups shredded Cheddar cheese (1 lb.)
2 tbsp. cornstarch
1/2 tsp. dry mustard
1 cup beer
1 tsp. Worcestershire
Pumpernickel or rye bread; cubed

1) In large bowl, toss cheese, cornstarch and mustard to coat cheese.
2) In 2-quart saucepan over low heat, heat beer and Worcestershire until hot, but not boiling.
3) With fork or wire whisk, gradually stir in cheese. Cook over low heat until cheese is melted and mixture is smooth and bubbling, stirring constantly. Pour into fondue pot for serving. Keep warm over low heat on fondue stand.
4) To serve: Let each person spear chunks of bread on long-handled fondue fork and dip into fondue. Yields 2 1/2 cups.
