I dont want a basic recipe, I have some questions about pickled eggs. my grandma used to make them and they were super hot with jalepenos. the stuff they soaked in was like a redish color so I'm assuming she didnt use regular vinegar and pickling mix. does anyone know what to use to pickle eggs that wouls turn them a purplish color? Any good recipes? How long do I let them soak for? what temp should they soak at.. in the fridge or room temp?? I need some advice, I have no clue how long to even boil the eggs. Please and thanks!

Pickled Beet Juice with sliced jalepenos or hot sauce : )

Place eggs in pan, cover with cold water, bring to boil rapidly. Remove from heat, cover and let stand 20-25 minutes. Immediately place eggs in cold water. Tap lightly, roll between hands to loosen shell.
Boil pickled beet juice with sliced peppers and onions. Let cool.
Place all in glass jar with eggs. Store in the fridge.
Enjoy!

I have found lots of different ways to pickle eggs, but this is how my family always made them. They do turn out red-purple, but not very hot. Hope this is at least a start for you.

Get a can of red beets, pour juice into a sauce pan, add equal amounts of apple cider vinegar and brown sugar, also add a few cloves. Heat until sugar melts. Dump into a sealable container, add beets and hardboiled, peeled eggs and put in refridgerator. They only need to set a couple hours, but the longer they set, the better they are in my opinion, at least a couple days.

Balsamic Pickled Eggs

INGREDIENTS
12 eggs
1 onion, sliced
1 cup balsamic vinegar
1 cup water
2 tablespoons white sugar
10 cloves garlic, crushed
DIRECTIONS
Place eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, and peel.
Place the onion, balsamic, water, sugar, and garlic in a saucepan over high heat. Bring to a boil, then remove from stovetop, and allow to cool to room temperature. Place the eggs in a glass jar, and the vinegar over top. Cover, and refrigerate for 4 to 5 days before serving; the longer the better!

Deviled Green Goblin Eggs:

For a festive look, serve in decorative Halloween cupcake liners.

6 cups hot water
1 (0.3-ounce) bottle yellow liquid food coloring
1/2 (0.3-ounce) bottle blue liquid food coloring
1/2 (0.3-ounce) bottle green liquid food coloring
2 tablespoons cider vinegar
12 large unpeeled hard-cooked eggs, with shells cracked
1/2 cup instant potato flakes
1/2 cup mayonnaise
1/2 cup sour cream
1/4 cup minced fresh chives
1/2 teaspoon salt
1/2 teaspoon seasoned pepper

Stir together first 5 ingredients in a large bowl; add eggs, and let stand 1 hour. Remove and drain on paper towels. Peel eggs to reveal pattern on whites.

Cut eggs in half lengthwise; carefully remove yolks. Mash yolks; stir in potato flakes and next 5 ingredients until blended.

Spoon the yolk mixture evenly into egg white halves. Attach 2 halves, gently pressing together stuffed sides.

Yield: 1 dozen

I don't know the recipe for it but if you decide to make them your home is going to smell like farts SOOOOOO BAD. Just a little heads up.
