Just looking for something quick, hot and yummy to do with leftover smoked turkey. No sandwiches, please.

VEGETABLE WITH SMOKED TURKEY, ROMAINE
AND PARMESAN SOUP

1/4 lb. slab bacon
1 carrot, peeled and chopped
1 onion, finely chopped
1 stalk celery, chopped
1 parsnip or turnip, peeled and chopped
1 clove garlic, pressed or chopped
8 Italian plum tomatoes, drained
1 qt. chicken stock
1 qt. water
1/4 lb. smoked turkey breast
1/2 c. tiny pasta pieces (i.e. orzo)
6 leaves romaine lettuce, chopped
1/2 c. grated Parmesan cheese
Pepper to taste

1. Cook bacon; drain and chop. Reserve 2 tablespoons of fat and add next 4 ingredients. Cook over low heat with lid on for 8 minutes.
2. Add garlic and tomatoes and bring to a boil.

3. Add stock, water, turkey and pasta and simmer gently for 10 minutes.

4. Add romaine and cook until it is completely wilted, approximately 10 minutes. Serve immediately. Sprinkle with Parmesan and pepper.

Variations:

Substitute chicken or ham for the smoked turkey.

Substitute spinach for the romaine.

Leave out the tomatoes.

This is taken from an answer posted here a couple of weeks ago. Dice the turkey, put in a covered casserole with a can of diced tomatoes/chiles and a can of pinto beans. Stir in a packet of taco seasoning. Bake in the oven on 350 degrees until bubbling (about 25 mins), or microwave it.

the amount of turkey and beans can vary depending on how many you have to feed ;-) diced onion is a nice addition.

"Smoked Turkey Pizza" - 1 serving

1 prebaked mini Italian bread shell crust
1/4 cup whole-berry cranberry sauce
1 tbsp. chopped onion
1/3 cup shredded Monterey Jack cheese
2 oz. thinly sliced deli smoked turkey; cut into strips
1 tsp. chopped walnuts

Place the crust on a baking sheet or pizza pan; spread with cranberry sauce, onion and cheese. Arrange turkey over cheese; sprinkle with walnuts. Bake at 375* for 10-15 minutes or until cheese is melted.

SMOKED TURKEY-PESTO PIZZA
At the restaurant, this pizza is made with smoked chicken, but turkey is easier to get and works just as well.
6 unpeeled garlic cloves
3 tablespoons olive oil
Cornmeal
Pizza Dough
6 tablespoons purchased pesto
1 cup grated mozzarella cheese
1/4 cup grated provolone cheese
1 cup 2 x 1/4 x 1/4-inch strips smoked turkey (about 4 ounces)
1 6 1/2-ounce jar marinated artichoke hearts, drained, sliced
6 1/4-inch-thick slices fresh mozzarella cheese, each cut into quarters

1 plum tomato, seeded, chopped




Preheat oven to 350°F. Place garlic in small dish. Drizzle 2 tablespoons oil over. Bake until garlic is very tender and golden brown, about 20 minutes. Remove garlic from oven and cool. Peel garlic cloves; chop. Set garlic aside. Increase oven temperature to 475°F.
Dust 2 large baking sheets with cornmeal. Roll and stretch each Pizza Dough ball on lightly floured surface to 9- to 10-inch circle. Place crusts on prepared baking sheets. Brush edges of crusts with 1 tablespoon olive oil. Spread 3 tablespoons pesto over each crust, leaving 1/2-inch border. Divide grated mozzarella and provolone, then turkey, artichoke hearts, garlic and sliced mozzarella between crusts.

Bake pizzas until cheese melts and bottom of crusts is golden, about 15 minutes. Remove pizzas from oven. Sprinkle chopped tomato over.

Makes 2 pizzas.

it is tradition at my house to have turkey enchiladas. Unbelievibly fast, easy and so YUM-O.

Take the turkey meat and pull it apart. Mix it with sour cream and shredded cheese.
Take the turkey mixutre and place about 1 1/2 spoon fulls in totillas (corn or flour to your taste buds I perfer flour) roll them up and place in casserole dish.
Once all the mixture is used up pour over the tortillas green enchilada sauce (you can buy it already jarred by Ortega and it comes in flavors OR if you want to make your own, I usually use fresh tomatillos, jalapeno, chicken stock, salt peper cilantro in a blender.)

Over the sauce spread some more shredded cheese, and bake until it is all hot and bubbly.

Turkey Pot Luck Casserole

4 ounces medium noodles
1 package (10 ounces) frozen broccoli spears
2 tablespoons butter
2 tablespoons flour
1 teaspoon salt
1/4 teaspoon prepared mustard
1/4 teaspoon black pepper
2 cups milk
1 cup grated mild Cheddar cheese
2 cups cooked diced turkey
1/3 cup slivered toasted almonds*






Preheat oven to 350°. Cook noodles following package directions; drain. Cook broccoli just until tender. In a saucepan over low heat, melt butter; blend in flour, salt, prepared mustard, and pepper. Stir until smooth and bubbly. Gradually add milk, stirring until thickened; remove from heat and stir in cheese until melted. Dice broccoli stalks; leave flowerets intact. In an 8-inch square baking dish, arrange noodles, broccoli stems, and turkey; pour cheese sauce over all. Arrange the flowerets over the top, pressing down a bit. Sprinkle with almonds. Bake for about 15 minutes, or until hot and bubbly.
Turkey casserole serves 4.
*To toast nuts, spread out in a single layer on a baking sheet. Toast in a 350° oven, stirring occasionally, for 10 to 15 minutes. Or, toast in an ungreased skillet over medium heat, stirring, until golden brown and aromatic.

turkey enchiladas or turkey tacos
these measurements are approx more or less may be added according to taste

2 cups of turkey chopped or shreded
corn tortillas
oil
1 lg can of cream of mushroom soup
1 8 oz cup of plain yogurt or sour cream
1 cup of diced green chilis preferbly fresh
1 soup can of water or chicken or turkey broth
sliced black olives
about 2 cups grated cheddar cheese

roll turkey in corn tortillas, fry them in oil they dont have to be crisp
layer them in a baking dish mix everything else together except for black olives & grated cheese & pour over rolled tacos & bake for about 30 minutes @ 350 degrees or so remove & add cheese & black olives & bake another 20min. let coll for about 5 minutes.
for tacos just fry the turkey in corn tortillas til crisp garnish with cheese, salsa lettuce & avacado
