yes you can freeze uncooked pumpkin pie filling without any problems
when you want to use just thaw in the fridge overnight and stir well before using
you can also freeze it in an uncooked pie shell
you may also want to freeze in portion size bags if you don't freeze in the crust

Pumpkin pie filling yes, apple pie filling no. When the apple is frozen, the cell walls start to burst and the apples tend to get mushy. Not good for making pies. The pumpkin is already mushy and should hold up ok.

You most certainly can. It's better to freeze the filling before adding any ingredients, but you can do it afterwords as well. Many people do it.
